About this Cook
My favorite things to cook
i like trying new things. some old faves include spinach/ricotta stuffed chicken wrapped in bacon, apple/onion pork chops with jamaican jerk sauce, herb crusted pork tenderloin, spaghetti, spicy tomato chicken over rice, etc.
My cooking tragedies
yea. i've had the top of the salt shaker pour off into my freshly homemade mashed potatoes. quite the tragedy. i scooped what i could but somehow the salt persisted. terrible!

Asian Glazed Chicken Thighs
This was absolutely FANTASTIC. Chicken fell apart tenderly, the sauce taste was amazing. I know how folks on this site don't care for folks to "add their own twist" to recipes, and I agree... but, in this instance, I was out of a couple of ingredients so I subbed other items and it still turned out great. I didn't have rice vinegar, so I used a 1/4 white vinegar. Used regular sesame seed oil (didn't have any "Asian" style) and had no green onion for garnish. Instead I used diced white onion and put on the chicken as it was cooking. FABULOUS!!! Can't wait to try it again!

Stuffed Pork Chops II
This turned out awesome! I made 3 different types. One - by the recipe. Two - Gorgonzola and Sun Dried Tomatoes. Three - onions, mushrooms, and hot sauce. I substituted a sleeve of saltine crackers in lieu of dry bread crumbs. Fabulous!

Chicken Pot Pie I
I used the can veggies as the recipe called for and it turned out great. The only problem with the first time I made it - it was a little bland. The next time I made it - I added some Cayenne (red) pepper and some hot sauce to give it a little kick. Just enough for flavor, not to singe the taste buds. :)
