About this Cook
My favorite things to cook
Anything fast and tasty. I love to bake, but with only my husband and myself at home, don't really find much opportunity to do so.
My favorite family cooking traditions
Every Christmas, we make chocolate peanut clusters to give away as gifts. These are possibly one of the easiest things on earth to make, but everyone always raves about them and looks forward to getting their "gift".
My cooking triumphs
My husband loves my pineapple upside down cake, so I guess that's a triumph.
My cooking tragedies
I stink at cooking fish. I have made a couple of decent salmon dishes, but that's about it.

Sweet Dinner Rolls
I don't have a bread machine and I still find these very easy to make. I even skip the step of spreading butter on them before shaping them and they still turn out light, moist, and delicious every time I make them. (I also just form them into balls instead of crescents because I'm lazy like that :)

Too Much Chocolate Cake
So delicious and moist and well, chocolatey! I topped it with a cool whip chocolate ganache and it was all the rage at the potluck I took it too. Like mentioned by a few other reviewers, I used mini chocolate chips and cut the oil down to 3/4 cups and it turned out perfect. This will now be my go-to recipe for potlucks, family gatherings, or just when I really, really want something super chocolatey :)

Baked Salmon II
I have been on the look out for a tasty, non-fishy salmon recipe for years. I'm so glad I came across this one. I would have never thought that a combination of such simple ingredients could result in such a flavorful dish. Now if I could only find a sauce to go with it, I'd be in heaven.
