Pumpkin Cream Cheese Muffins

These are wonderful! My husband also loves these. This recipe made 24 muffins and I ended up making twice the streusel topping and using brown sugar. I also used reduced fat cream cheese and chopped walnuts instead of pecans. I kept them in the oven about another 5 minutes too. Would definitely make these again, delicious!

Quick and Easy Green Chile Chicken Enchilada Casserole

OMG! This is just amazing! My husband's exact words, "This is so good"...(scoops another mouth full)..."this is the bomb"!. I have to agree...much better than I thought it would be. Just randomly selected this dish because it popped up on the screen. I even used canned chicken breast that I seasoned and heated in the microwave to save time! Other than that, I followed the recipe exactly. This recipe will definitely be going in the rotation.

Chewy Caramel

Butter Pound Cake

My husband is more the butter pound cake fan than I am, but this will be my go-to butter pound cake recipe. After a sort of sketchy first attempt with this recipe (which he LOVED), I decided to try it once again at his request, but followed a reviewers advice and used an entire pound of butter. I also increased my cook time to 2 hours and used a cookie sheet underneath my tube pan (I had leakage the 1st time, I've never used a pull apart pan like that). My results were much improved with these changes! I'm having a piece now with coffee.

Best Chocolate Chip Cookies

Perfect recipe. I use this as a base and omit the chocolate chips at times, and add LOTS of chopped pecans and toffe chips. AMAZING!

Corn Casserole

I searched for an easy corn casserole recipe since my husband discovered he loved this, and this was the it! Bakes beautifully, wasn't runny and was a winner with me and my husband! It will become a staple at the holidays and many dinners to come.

French Toast Corners

Cracked Sugar Cookies I

OMG, the search is over for the perfect sugar cookie recipe! I just made these today and they're so delicious, I wouldn't change a thing. I did take the rounded dough and dip it in colored sugar crystals and they look & taste great.

Caramelized Brussels Sprouts with Pistachios

Me and my boyfriend (who like brussels anyways) absolutely loved this recipe. I don't want them any other way. So robust and full of flavor. I did take others advice and halved the sprouts. WONDERFUL.

Nutty Apple Crisp

I've tried a couple apple crisp recipes lately and this one is a definate winner. I added a little ground cloves and cinnamon, also added currants and dried cranberries to the crust and it's just delicious! Me and my boyfriend made it for breakfast and by early afternoon, it was gone. I plan to make another this weekend and perhaps try wheat flour.
