Rich French Onion Soup

Awesome and Easy recipe. I got hooked on French Onion Soup while pregnant (it was my pickles and ice cream!) and never thought I would actually be able to reproduce anything even close to most restaurant versions... Well this is it! Amazing and simple, and I'm now on my third batch in 3 months and I can't wait until it's done. The only thing I do differently from the stated recipe. I use gruyere cheese (the traditional cheese to use) and cube and toast my bread, place it in a soup crock, top with the cheese and then stick the whole thing under the broiler until the cheese starts to get brown and bubbly... It is fantastic!

Irish Beef Stew with Guinness® Beer

I've made this twice before, and am embarking on my third pot! I adore it! The first two times, I've followed the recipe exactly. This time, I've add a bit more meat and potatoes and some carrots, just to see how it would taste... I had to add in a little bit of beef broth to cover everything. But wow is it fantastic! This is a certified hit in our house. Especially with a homemade loaf of country bread to clean the bowls with!

Christmas Cookie Cut Outs

These cookies came out PERFECT! I followed the recipe exactly but for one thing. because of some unexpected things we made the dough one night. and didn't roll and bake them for almost a week later. I also took a few suggestions from Alton Brown's Good eats show and split the dough up into 4 sections before I chilled it then rolled and baked each section using powdered sugar instead of flour. I also used a set of 1/4 inch rolling pin bands so that the dough rolled even and to the right depth. Those made a difference too. They were a huge hit at my daughter's Christmas Party. However, I can't speak too the taste of the icing or anything because we simply dusted the cookies with colored sugar and sprinkles. and I honest thing they were perfect that way. I will definatly be making them again, maybe even with the icing.... oh my only negative, they spread out a bit more than I expected. luckily I was making retty basic shapes but had they been more complicated they would have run together and blurred the shape. but that's about it!

Parmesan Chicken

We love this recipe.... it used to be that once a month or so we would go out just so that we could get Chicken Parm... not any more.. I can throw it together now in about 20 minutes! I followed the recipe exactly the first time I made it... and it was so incredible... moist inside, crispy outside! everyone was looking for thirds. This time around i'm going to follow the suggestion and add a bit of garlic to the egg mixture... and maybe will even let the chicken soak in it until hubby's home from work

Lemon Cream Pasta with Chicken

Wow, it is very good. My only issue is that the lemon comes through almost on the heavy side. Which normally wouldn't be a problem, but my husband isn't a big fan of lemony flavors to begin with. I think the next time I'm going to be halving the lemon mixed into the pasta and seeing where that gets me. one other thing that I did. I actually had seasoned the chicken the night before and let it marinate in the lemon juice for almost 24 hours before it was cooked. wow... Hubby and I tasted the chicken before adding it to the pasta and it was lemony and yummy enough to stand on it's own!
