Jalapeno Popper Grilled Cheese Sandwich

I tweak this all over the place - what's new ;) I made the filling with 8 oz cream cheese, a drained 4 oz can of diced jalapenos [not pickled], ~1 cup grated mozzarella, ~1/2 cup grated cheddar jack, and ~1/4 cup bacon bits. I used squaw bread [remind me not to use dark bread for grilled cheese! hard to tell when it's browned - when it starts out brown!], and served it with strawberry jelly. Num num! Though I need to cut the jalapenos back by about 1/2 next time {= Mom liked this - but I picked some of the jalapenos off hers before grilling - so her face did not melt off (=

Bird's Nest Breakfast Cups

I made these for Recipe Group. I used one muffin pan, and foil liners - making 12 hash brown nests at a time - then moving them to a cookie sheet, before adding the eggs, bacon, and cheese. Next time, I will spray the foil liners, first. And will add green onion! This will make a nice hand-held breakfast for my little friends before we head to the beach (= Edit: the day after our trip to the beach, I made breakfast sandwiches with the leftovers, using leftover biscuits, deli turkey, and jack cheese. Yum! My friend said it was the best breakfast I've made for him (=

Monkey Bread Kabobs

For Recipe Group (= This was the big hit at our potluck! I used large buttery biscuits, and Truvia and Splenda baking mixes for the sugars. I used four biscuit quarters, alternated with three Fuji apple chunks, and bookended with the maraschino cherries, per kabob. I wanted to serve it with caramel sauce for dipping, but forgot to grab it as I was running out the door. Honestly, it did not need the sauce. Update, 7/31/14 - guess what we had for my birthday breakfast?! We used apples, again, and this time added chunks of fully cooked chicken smoked sausage - yum! Four thumbs up from manchild and fdil =D

Frozen Peanut Butter Pudding Squares

I did these way late for Recipe Group. And tweaked them all over the place (= I used sf, ff vanilla pudding and nf milk. I also mixed in a dollop of Cool Whip. I made sandwiches with cinnamon grahams, vanilla wafers, and chocolate teddy grahams. Mom loved these - and I was afraid I wasn't going to have any to take to work (= I liked all three variations.

Strawberry Gazpacho

My daughter and I loved this. Mom liked it. Daughter's [picky] bf only took a couple bites. Daughter's client couldn't quite get the concept of a cold soup, so he put it on a chicken taco and his cauliflower - like a salsa (= Slightly tweaked . . . I left out the tarragon and parsley, and I threw everything, except about half a pint of strawberries, about 1/3 the cucumber, and the avocado, in my food processor. Simple and yummy. Not sure I would make this version often - simply because I think I can get the grape tomatoes that I love at less cost than strawberries - but I would make it again (=

Strawberry Margarita Pizza

I made this for Mother's Day, and everyone loved it! I've made it twice now (= The first time, I spread out the cookie crust on a cookie sheet. I used kefir cheese in place of the cream cheese. I used fresh strawberries - ~2 pints, diced, adding them to the margarita mix mixture and mashing them. Both toppings were thinner than I wanted, with everything running off the crust. The second time, I sliced the cookie dough into 1/2 inch rounds, and placed them in an 8x11 baking pan. I left out the 1/2 cup milk, adding just the kefir cheese to the mixed pudding and 1 cup milk. I added extra cornstarch [1/2 - 1T], and stirred in the diced berries after the glaze thickened. I liked the second version better (=

Mexican Brownies

This is an excellent brownie. My latest version had 1/2 butter, 1/2 coconut oil. I might use an applesauce/coconut oil combination next time, leaving out the butter altogether . . . I could not find the pequin chile. The first time I made them, I used the cayenne sub - but it needs to be at least doubled. I want more heat to them. This time, I threw a dried ancho chile in my food processor - and ended up using the entire thing [~4 tsp] - still not enough heat. I thinking next time I will probably use both the ancho and the cayenne. By the way, this is a moist brownie - and I think it would be lovely, even without the cinnamon and chile . . .

Southwestern Corned Beef Quesadillas!

This was good! I did tweak a bit (= I thought I had a can of diced green chilies - but, instead, had a large bag in the freezer - which I didn't want to mess with, to use 2 tbsp. I used cilantro jalapeño tortillas and added sriracha and chopped cabbage that I needed to use up. I layered cheese, beef, cabbage, cheese, sriracha between the tortillas. Next time, I would add a layer of glue [cheese] between the beef and cabbage. I liked the crunch the cabbage added. The sriracha worked well [since I didn't have available diced green chilies]. I would definitely make this again (=

Maltys B E A T Sandwich Recipe

This was very good - even though I goofed it. I didn't have tomatoes - and I forgot the avocado ... until I was halfway through with the sandwich ~sigh~ Since I'm cooking for one, I made the full cream cheese mixture - and put the leftovers in a bowl in the fridge to use another day. I bought tomatoes this afternoon, and will remember the avocado next time!

Turkey Club Pizza With Avocado Sauce Recipe

Mom and I are really enjoying this!!! I stuffed the crust (= and used less of everything - except the avocado sauce - than called for [my crust was probably small]. I used turkey bacon. I used red onion, which I'll probably dice next time. And I used mozzarella - which I'll grate next time. Wonderful combination of flavors.

Reuben Crescent Bake

I made this for Recipe Group: Just finished sharing this with Mom. She kept saying how good it is (= I recently had a pastrami Reuben out, so when I couldn't find the corned beef I used pastrami. I used 2 cans of crescent rolls in a larger pan. I also subbed 2 cups of shredded jack cheese because I don't care for Swiss. I used a 16 oz jar of sauerkraut with 2/3 c Thousand Island. My bottom crust sank down the sides of my pan. I pressed my saurkraut, rather than squeezing it, and my bottom crust, where the top and bottom crusts met, was soggy )= Next time I will brush the bottom crust with egg white before pre-baking it. We both enjoyed this, and are looking forward to leftovers (= [I did find the corned beef right after she sliced the pastrami for me - so next time I will make it with corned beef (=] edit: When I got back home, I took my leftover portions and flipped them over in the pan, making sure the soggy portions were exposed and threw it back in the oven for another ~20 minutes to dry it out. Just had some leftovers for dinner at work - yum!

Jan's Jalapeno Popper Pizza

I made this for Recipe Group. Of course I tweaked (= I used red onion, turkey bacon, and two 4 oz cans of diced jalapeños. I had pre-cooked my bacon, so I used olive oil and butter to sauté the onion and garlic. Then I added the chopped, cooked bacon and the jalapeños, before stirring in the spices and cream cheese. I made a 2 ingredient pizza crust =D and, following Molly's lead, and stuffed it with string cheese, split in half lengthwise. I spread the cream cheese mixture on the crust, then sprinkled the cheeses and parsley over the top. All my tweaks worked fine, and it looked prettier than I expected (= But it set my mouth on fire! Yow! Next time I will use 1/2-1 can of jalapeños! One last, bizarre sounding tweak: after a couple bites, I spread a thin layer of strawberry jelly on the pizza [that's what I put on jalapeño poppers and the jalapeño popper grilled cheese].

Pot Roast with Balsamic Onions

I made this for Recipe Group. "Quick" and easy. I have to admit, I did not measure the seasonings. I browned the beef late and night and let it cook overnight, while I slept. In the morning, I shredded the beef, and placed it back in the crockpot, set to warm. My daughter and I ran an errand, and came back to have the roast for lunch with Mom. We love onion cooked with roast beef, so I added an extra onion. Wish I'd thought to add mushrooms! I liked this, but will probably stick with my usual method of cooking pot roast. Mom and daughter liked this VERY much, and split the leftovers, leaving me with none! I served it with a cucumber and onion salad, mashed sweet potatoes, and roasted brussels sprouts and cauliflower. A very enjoyable Sunday lunch!

Tex-Mex Migas

I made this for Recipe Group. I tweaked it a bit - I know I shouldn't, but I did - due to what I had on hand. My first tweak was to use some garlic butter that I had in my fridge that needed to be used. I nearly bought tomato yesterday, but remembered I had some at home - yellow cherries I was going to quarter. Well, I'm not sure what happened to those tomatoes, but they're not in my fridge! So I rummaged around in my pantry and found diced tomatoes with green chilies. I did add another tbsp of diced green chilies, because I had already opened my can - and it didn't look like there was much in the tomatoes. I did not want to buy a bag of tortilla chips to use 1/4 c. I had just bought some Pringles Tortillas-Southwestern Ranch - so I used those. I did use a little extra, simply because 1/4 didn't seem like enough for 6 eggs. I also used extra [colby jack] cheese. I used up a bag, not bothering to measure. My final tweak was to use my favorite corn & whole wheat blend tortillas, warming them on my burner - I prefer the taste of tortillas on the burner to tortillas in the microwave.... These were yummy, and received high praise from my company (=

Mock Pink Champagne

I made this to take to the nail salon for my fdil and her bride's maids the day before my manchild's wedding. We all enjoyed it very much! I made 1 1/2x the recipe, and babyxray and I enjoyed the leftovers the day after the wedding before heading to the airport. I did use ginger ale that I had leftover from Thanksgiving in place of the 7up.

Zucchini Cheddar Pancakes

I was intrigued by this, and had to try it. LOVED it! I did not have the onion I thought I did - but had some shallots that needed to be used up. I also threw in a couple cloves of minced garlic. I did have trouble getting them to cook through - so I just spread them out thin. [I think that was me - it's been a long time since I've made pancakes!] Can't wait to make these again! OH! These made GREAT breakfast "sandwiches," with egg, turkey, grated cheese, and avocado!
