About this Cook
My cooking tragedies
First was making a grilled cheese for my (then) husband, MANY years ago, using non-fat American cheese. The cheese never melted! Then I made a quesadilla for him - but the only other cheese I had was grated mozzarella. But when he ate it, he found that the cheese was moldy )= The second was baking an angel food cake for my son's 5th birthday. I took it out of the oven, inverted it on a bottle and left it "hanging" over the stove. I was washing dishes and heard a thud behind me. I turned around and the whole thing had tumbled over. Grateful that I had just washed the stove, I righted the bottle, hung the cake pan on it again, and went back to the dishes . . . A few minutes later, I heard another thud . . . This time when I turned around, the cake had fallen out of the pan! (The fall had loosened the cake!) (I was again very grateful for the freshly washed stove top!) I placed the cake on a plate and we all just ate it with our hands.

Apple Cider Pulled Pork with Caramelized Onion and Apples
Recipe Group: Mom and I both really enjoyed this! I tweaked it slightly - using Splenda Brown Sugar Blend, and an extra apple. The one "flaw" I found in the recipe, is that it takes a lot longer than 10 minutes to caramelize onions [and my stove was turned up higher than medium-low!]. Next time, I would probably only use 2 bottles of the hard cider - or even, maybe, Mots For Tots apple juice. And, throw in another 1/2 an onion and a couple more apples. I took Saveur's suggestion and served them on pretzel buns (=

Avon's End of Summer Sunday Morning Peach Coffee Cake
For Recipe Group: I used vanilla non fat Greek yogurt, because I had some that desperately needed used up! I also used white whole wheat in place of the all purpose and whole wheat flours. Love the crumb topping - and may double it next time, putting half in the middle of the cake. Thank you, Avon!

Peanut Butter Pie Bars
Recipe Group: After reading Mi Being Mi's and Shearone's reviews, I cut the powdered sugar in half [3/4 c] - next time, I may leave it out, altogether, using just the brown sugar and honey. I also used a rounded cup of peanut butter - maybe 1 1/4 cups, altogether [creamy, because it's what I have on hand]. I intended to use only peanut butter chips on one half, for my chocolate-hating manchild - but had accidently picked up a mixed bag of milk chocolate and peanut butter chips - which worked out fine. I used about 1/2 cups of the chips. I lined my pan with nonstick foil, which I used to lift the bars out of my pan, placing them on a cutting board to cut into squares. I liked it with the crust - BUT, the crust just fell off when I picked them up. It seemed somewhat better, after I refrigerated them. I might make them again, without the crust. It would be almost like a peanut butter fudge (=
