About this Cook
My cooking tragedies
First was making a grilled cheese for my (then) husband, MANY years ago, using non-fat American cheese. The cheese never melted! Then I made a quesadilla for him - but the only other cheese I had was grated mozzarella. But when he ate it, he found that the cheese was moldy )= The second was baking an angel food cake for my son's 5th birthday. I took it out of the oven, inverted it on a bottle and left it "hanging" over the stove. I was washing dishes and heard a thud behind me. I turned around and the whole thing had tumbled over. Grateful that I had just washed the stove, I righted the bottle, hung the cake pan on it again, and went back to the dishes . . . A few minutes later, I heard another thud . . . This time when I turned around, the cake had fallen out of the pan! (The fall had loosened the cake!) (I was again very grateful for the freshly washed stove top!) I placed the cake on a plate and we all just ate it with our hands.

Orzo Tomato Artichoke Salad
Reading the other reviews I can see I'm in the minority here, but I did not "love" this - it was just "okay." I made it for recipe group, as written (with the exception of using about 1 1/2 c grape tomatoes, cut in half) - but really wanted to add, at the least green onion and feta. It also needed, maybe salt, maybe some other spices. Someone mentioned it would be good with sesame - which made me think replacing some of the olive oil with sesame oil would be tasty . . . I doubt I'll make this again - because if I do, I'll end up doctoring it up, and making it into my regular pasta salad.

Santa Fe Cheesecake
I have Marianne to thank for this recipe - she mentioned it on the buzz, and I just had to try it (= I made this for a baby shower, following other reviewers' suggestions of adding 1/2 packet of taco seasoning to the filling. It was so good! I liked it served with tortilla chips - which I feel made the chip crust somewhat redundant. I will make this curstless next time . . . I also subbed 6 oz plain greek yogurt for the sour cream on top. I wanted to top it with green onion, diced tomato, and black olives - but just plain was too overwhelmed and ran out of time. So I just used the olives. It was just plain yummy! Some people were a bit confused by it, thinking it was a dessert - even though it was sitting by the chips, and was topped by olives - but once they got past that, everyone liked it (=

Special Request Casserole
Made this for recipe group. Very good. Though I did tweak it a bit (= I used whole wheat saltines. I counted out 30 - and there were just a few left in the sleeve, so I used those, too. [38, total, because I ate 2 (=] I used 3 eggs and 6 whites, to bring down the fat and cholesterol. I used [1.5 oz - ~6 slices] bacon bits, because I HATE frying bacon. I used a triple cheddar mix, and added ~1/2 c grated parmesan, and ~1/2 c feta. I also added 2 minced garlic cloves and a bunch of green onion, diced. Next time, I will probably mix the eggs and milk, then later everything over the crackers, pouring the egg/milk mixture over last . . .
