Refried Beans Without the Refry

I've made this a few times. I was skeptical about being able to put dried, unsoaked, beans in the crock pot and have them turn out ok for this recipe, but IT WORKS! This recipe is truely a no-fuss recipe and it makes a ton! I added some dried chipotle seasoning for some extra kick and taste. My family uses it for burrito filling. You can also make your own frozen burritos with this mixture. Just add any ingredients you want for your burrito, wrap it in parchment paper (or cling wrap), place in a freezer bag until ready to use. When ready to use, take your burrito out of the freezer, unwrap, cover and microwave on high for about 2 minutes (or until hot in the center.) Enjoy!

Chocolate Orange Truffles

Very delicious and easy! I made these to give as homemade Valentine's Day candy. I would make the following recommendations to the recipe: double the recipe, I ended up with 28 very small chocolates. I would double the recipe and make larger balls. I had trouble getting my filling to get firm enough. Even after 2+ hours of chilling it wasn't firm enough to roll. So I scooped out the size balls I wanted onto a lined cookie sheet, then placed them in the FREEZER for 30 minutes, then I rolled them into balls, and "froze" for another 15 minutes longer before rolling them in the cooled chocolate coating.

Italian Butter

Very yummy! This is very easy to do and it adds a little flair to your Italian dinner. We have made this twice and will continue to make it.

Mahogany Chicken Wings

Oh my, these are good. My husband made them for a Super Bowl party and they were a hit! The only change we made is that we added seaseme seeds to the recipe. We will make this again!

Caesar Salad Supreme

Very good! I will definately make this again, it is so much better than store bought bottled dressing; quite easy and worth the work. I took it to a dinner club party and everyone liked it. I would cut back very slightly on the garlic (I don't usually say that) and I used the anchovy paste instead of the fillets. My kids (2 and 4)liked it, but most kids probably wouldn't because of the strong flavor.

Best Italian Sausage Soup

This was terrific. I served it for a dinner party. It accompanied Italian Stuffed Chicken Breasts (which were stuffed with Mozzarella, sun-dried tomatoes, and ham), risotto, and bread. Everyone commented on how delicious it is! Try it, you'll like it. I pre-cooked the sausage, then put everything into a slow-cooker on low/med setting. I added Accini Di Pepe as the pasta during the last hour. I cooked it a total of 6-8 hours. Boy, did it smell great!
