About this Cook
I've have a love/hate affair with food. But for the reasons you might think. I've had Crohn's disease for over 30 years and when I ate, I woulld get so violently ill, I couldn't eat much or at all. So I learned early on to eat to live, not live to eat. Since my disease had finally gone into remission after 2 resections, I have actually learned to appreciate food and have developed quite palette. I've been cooking with a flair of Italian and American influences. I love to bake, make pasta, etc. What makes me happy is making my family happy when they sit down to eat. That is my thanks, their smiling faces.
My favorite things to cook
I love to cook soups/stews. I love chopping vegetables and diligently work hard at making a rich, full flavored broth. Then I make a fresh loaf of bread to go along with it. When I try recipes, I typically read them over and make them the way I wanted to in the first place. I also enjoy baking, cookies, cakes, cinnamon rolls, etc.

Tommy's Ham Casserole
This is really very good. I also added cream of chicken soup, soup cream and 1/2 & 1/2 to sauteed onions and celery. Added a little poultry seasoning, seasoned pepper and garlic. Topping I crushed up some saltines, melted butter and sharp cheddar cheese. Our family ate it up.

Split Pea Soup
This is my first time making split pea soup. I followed the recipe exactly, I had to had quite a bit of seasoning to get it to taste right. Next time I will use chicken stock to boil the peas/onions. I had to use an immersion blender to make it creamier. It was "okay" but won't use this recipe again.
