Spanakopita II
My husband makes these for us frequently - and they are so delicious! We have this recipe bookmarked and they never last long at our house. A great lunch item. Props to the husband of the house!

Quick and Easy Brownies
Very easy to make, whipped it up together with my two year-old who definitely liked the batter! haha! The main thing that I liked about this recipe is the fact that it is easy to make with those basic ingredients that a person usually has laying around the house. I wanted a chocolatey fix and rummaged in my cupboards (and rummaged online) and this is what I found. I definitely prefer brownies on the fudgy side so I went with the 1 cup flour as suggested (although I halved the recipe so actually used 1/2 cup flour). It was sooo good. I omitted the nuts and sprinkled a few choco chips on top of the batter before baking. According to my daughter "YUMMY BROWNIE!"

Butternut Squash Soup II
I can't believe people who said this was tasteless! This was sooo easy and sooo delicious. I did NOT roast the squash before hand like some suggested, I cubed and browned it like the recipe called for, it only took minutes. I DID add celery seed instead of celery (didn't have any), a couple garlic cloves, and cinnamon. I also like my soup on the sweet side but did not like previous suggestions of using brown drew inspiration from another squash soup recipe on this site and added one cubed apple with the veggies and a couple ounces apple juice with the stock. YUM YUM! I can imagine it will be good with the dollop of sour cream, but it certainly doesn't need it. I am glad to find a cream-free squash soup. I might sprinkle some slivered almonds on top when I serve it for supper later (had a taste before hand!!) Happy concocting!
