Tex-Mex Beef and Cheese Enchiladas

Very good Tex Mex flavor--the best recipe that I have found so far. I grew up in South Texas and now live in Florida--haven't found any good Tex Mex here so I try to make the dishes that I grew up eating at home. I used Gebhardt chili powder which I think gives an authentic flavor. Definitely will make this recipe again.

Indian Tandoori Chicken

This was an easy, delicious meal. The chicken was moist, tender and tasty. I followed the recipe and marinated for about 6 hours. We grilled it and added the cilantro--wow--everyone loved it. Thanks, Simmi!

Louisiana Shrimp Creole II

This is a quick and easy dish. It was bland for our taste so I added white wine and creole seasoning. The addition of the corn starch made it too thick so I added chicken broth until it was the consistency that I desired. A great base recipe that can be easily seasoned to suit your own taste.

Amy's Cilantro Cream Sauce

I made this sauce today to serve with fish tacos. Yum! It was great on the fish tacos and also with tortilla chips. It was moderately spicy when I first made it but after refrigerating it for a few hours, it was not spicy to us. Not sure why???

King Ranch Chicken Casserole I

Everyone who grows up in South Texas knows a version of this recipe. It is easy and always delicious. I use corn tortillas in alternating layers with the sauce, shredded chicken and cheese. Delicioso!

Big Charlie's Gumbo

Wow! This is a great recipe! Having lived in Houston, I was used to being able to great cajun food at restaurants. We now live in Tampa and have found it not as easy. I used 2c chicken stock, 2c fish stock, 4c water, kielbasa, shrimp, crab meat and cat fish. I did not use the beef and could not find andouille sausage so I used kielbasa instead. This was awesome! My husband and I thought it tasted like a good restaurant recipe. We will definitely make this again.
