Homemade Pizza Sauce

Thought this was just ok. A little sweet for my taste, not enough zest. Tried adding more pepper flakes, but still kept feeling like something was missing?

Turkey Brine

I used this brine for my turkey this Thanksgiving. This was the first time I had ever brined a turkey before. What a difference! My bird was juicy, flavorful and gorgeous. After rinsing and drying off the turkey, all I did was pour melted butter, sprinkle salt and pepper and pop in the oven. Tented for first half, uncovered last half. I had tons of drippings which made the most delicious gravy. I will never bake a turkey without brining first again.

Seared Ahi Tuna Steaks

This was not good. The seasoning did nothing to compliment the tuna. Tuna isn't cheap and I feel like I wasted it on this recipe. I am honestly shocked that so many people seemed to enjoy this.

Best Ever Sausage with Peppers, Onions, and Beer!

Creamy Twice-Baked Potatoes

I made this last night & it was really good, a nice change from plain baked potatoes. I used lowfat sour crean & lowfat cream cheese, and added some cheddar as some have suggested. I also added more salt, some pepper & garlic powder. I will definitely make again.

Strawberry Jam

This is soooo good! It was really easy, especially using a food processor. The biggest thing was being patient while it is boiling and keep stiring. Also, be careful while it is boiling because it bubbles really high, fast. I got splattered a little and it hurt! I had never made jam before this and wasn't quite sure what to expect. I made it last night and this morning it was ready. I've never been a jam/jelly eater, but my husband and son love peanut butter & jam sandwiches. Store jams taste pretty crappy compared to the homeade stuff!

King Ranch Chicken Casserole I

This was really easy to make and tasty. I used a few of the suggestions made by others: corn tortillas vs. chips, made layers and everything was moist, sauteed the onions with garlic, fresh cilantro, oregano and chili powder... it tasted like chicken enchiladas.

Bow-Tie Pasta With Red Pepper Sauce

This was tasty and a nice cange from the normal tomato based pasta sauces. I took a few of the suggestions and baked chicken, also added some crushed red pepper. I'm not big on bow tie pasta, so I layered angel hair, the baked chicken, sauce and sprinkled with parmessan cheese. A side salad and garlic bread completed the meal. Thanks for the recipe.

Simple Ranchy Breaded Fish Fillets

THis was ok. The fish was very moist, however I found the ranch to be really salty. Maybe if I had just lightly brushed the fish with the paste, instead of dipping it in before the bread crumbs?

Bacon Wrapped Smokies

These were pretty good. I think it is definately a man appetizer. I made around 200, stored them in a crock pot as some others had recommended and none came back home with me. I cooked them quite a it longer than the 45 minutes to make sure the bacon was crispy.

Broiled Tilapia Parmesan

This is so easy and really flavorful. I left out celery salt and replaced with garlic. Also mixed a little panko before putting on fish and sprinkled a little more after spreading the mixture so it wouldn't melt off.

Chicken a la Good

I stacked this like some others suggested, lso used boneless/skinless chicken thighs. I didn't use the whole can of chicken broth because after I started pouring, it was entirely covering the chicken and I wondered how my bacon would crisp at the end while swimming in broth. My picky husband liked this alot, however we both agreed this could use some sort of sauce. The chicken broth just wasn't doing anything for us. Any suggestions? I will definately make again and experiment with different sauces on top.
