Cream Cheese Basil Summer Squash

Reviewed: Aug. 23, 2013
I did not use basil but I did use dill and lemon pepper and it was awesome. I also cut the cream cheese down to four ounces instead of eight, we don't eat a lot of dairy so that was plenty for our needs. I baked it in the oven at 350 stirring every 10 minutes for 30 minutes.

Chicken with Lime Butter

Reviewed: May 6, 2013
I have made these time and time again. I add 1 teaspoon of vanilla just because I like vanilla. I have used this recipe for apple muffins. I replaced the bananas with half a can of apple pie filling and added 1 teaspoon vanilla and 1/8 teaspoon of cinnamon. Every thing else was the same. I used this recipe for apple banana muffins all I did was add half a can of apple pie filling. I used this recipe for making peanut butter chocolate chip muffins. I added 1 cup peanut butter and 1/2 cup with chocolate chips. I used this recipe to make banana blueberry muffins. I added 1/2 cup fresh blueberries. I just realized every time I edited it didn't leave a date. This is a simple muffin recipe. I have modified it several times for different events. I use the banana peanut butter one for funerals, the blueberry ones for births, the apple ones for new neighbors. I have used these for anniversary and graduations as well. I am no baker but a great cook and these come out perfect every time.

Robust Garlic Baked Chicken

Reviewed: Dec. 6, 2009
THIS WAS AWESOME!!!! My hubby is not a big fan of chicken especially baked but he loved this recipe. I also added more of my favorite seasonings such as thyme, lemon peper, a little seasoned salt, and some oregano. I took a baby medicine droper (new of course) and sucked up the pan drippings and injected the chicken with them under the skin and in the cavity about every 20 minutes. The chicken was very tender and juicy!!! I will defiantly do this again.

Oven Brown Rice

Reviewed: Dec. 6, 2009
If you are using instant brown rice put 2 cups instead of one! I also added about 1/8 c of vegetable oil in the rice to keep it from sticking to the pan. I also covered the pan with tin foil. It was a little tough with out the tin foil.

Deep Fried Pork Steak

Reviewed: Dec. 7, 2009
This was very good! My sons who never eat anything ate this down and then asked for more. Not something that I will serve often just because it is so not good for you but is one for when the kids are at grandma's.
