Homemade Black Bean Veggie Burgers

I made these twice just as instructed and they turned out great. At least as good as most of the restaurant bean burgers I have had.

Butternut Squash and Turnip Soup

I had butternut squash and white turnips from my CSA share and I was clueless as to what to do with them. This soup filled the bill nicely. I enjoyed the soup, I would have given it four stars but my husband and kids were not nearly as enamored with it as I was. I guess this means it might not be the best choice for picky eaters.

Downeast Maine Pumpkin Bread

Awesome! I've made this three times now and everyone loves it. It was gobbled up fast when I made it to go with Thanksgiving dinner. I did make a few alterations: I used 1/4 cup of vegetable oil and 1/2 cup of applesauce instead of the 1 cup of vegetable oil and I used 2 1/2 cups of sucanat instead of 3 cups of sugar. The loaves were moist and sweet, tasted like pumpkin pie only better!

Tex-Mex Turkey Soup

Awesome soup! I made this for a Southwestern themed family gathering and received rave reviews and several requests for the recipe. I did make two small changes. I used an extra cup of salsa instead of the condensed soup and I used the broth produced from cooking the turkey instead of bullion cubes (bullion cubes and condensed soups have MSG which I try to avoid).

Mexican Salad

Yummy! Of course I love chickpeas and black beans, they are so good and good for you. I did change one thing, I halved the olive oil. 1/2 cup just seemed heavy for me, and I don't personally like heavy dressings or much oil on my salads. Other than that I followed the receipe as written and I thought was great. I served it with corn tortilla chips on the side and both disappeared.

Turkey Lettuce Wraps with Shiitake Mushrooms

Pumpkin-Oatmeal Raisin Cookies

These cookies made a really tasty twist on oatmeal raisin cookies. I made a few tweaks to make them a little healthier. I used a cup of sucanat instead of two cups of sugar and used a half stick of butter instead of the whole. I also added a little orange zest for some zing. They were gone even before they cooled!

Apple Hermits

My family loved these and I can feel pretty good about them nutritionally. I baked them in a baking dish and they reminded me of blondies. The one problem I had was getting them baked enough to NOT be gooey. Of course, that may be a result of substituting organic Kamut flour, which tends to be a little heavier but has an awesome flavor.

Black Bean, Corn and Turkey Chili

Really awesome! Everyone loved in my family loved it. This is the first time I've made chilli and didn't use beef, I was shocked at how the turkey just absorbed all the flavors so perfectly. This is on of my new favorites!
