Christmas Breakfast Sausage Casserole

I have made something similar for years on different occasions. It is really good to fix for a large group to satisfy that morning hunger. I use the same ingredients as listed but cover the mixture with saute'd sliced apples seasoned with a little cinnamon and nutmeg then top with the cheese.

Fresh Mango Salsa

I love these combinations of flavors. I too use red onion and usually include some diced sweet bell peppers and a little bit of dices fresh jalapenos. This is a wonderful topping for baked or pan saute'd tallapia. You can also add a bit of sweet chile sauce to move toward a more Asian taste, but the mango really stars in any variation you my like.

To Die For Blueberry Muffins

Frozen blueberries will work just fine, as well as any frozen fruit if you may choose to try. In order for this to work, however, you must toss the frozen fruit in flour just to give it a light coating, before folding into the batter. This will prevent the juices from bleeding into the batter durng baking.

Sausage-Stuffed Eggplant

I gave this delightful dish the highest marks mainly because of the incredible blend of flavors and texture. I prepared this last night following the recipe to the letter and was pleased with the results. I did find handling the product somewhat cumbersome. The next time I try this I will use individual gratin dishes for main course servings or ramekins to serve this as an appetizers spread with crostini. The variations and applications are exciting.

Tortilla Rollups II

If you have a jar of jalpenos handy add a little of the liquid to the cheese mixture to help with the spreadability and give a little extra kick. Also warm the tortillas in a slightly damp paper towel in the microwave and keep them covered with damp towels during make-up this will aid in creating a tight roll. Use a very sharp non-serated knife (a sushi knife works great). This will prevent tearing.

Parmesan Tomatoes

Really good accompanyment for many different entres. I have done this for years with halved romas. An added touch which helps stablize the product on a sheet pan is to cut 1/2 inch slices of yellow squash, remove pulp, and rest tomato inside. Using the halved product also reduces the loss of juices. The presentation is artfull while simple.
