Pumpkin Casserole

My husband and I love this side dish. I used a few of the other reviewers suggestions. First, instead of using self-rising flour, I used 1/2c. all purpose flour plus 1/2 tsp. baking powder, 1/4 tsp. salt and 1/8 tsp. baking soda. I have found that whole wheat flour works just as well. I also cut the sugar in half, which is just right. A few other health-minded modifications that I have made were using fat-free or low-fat evaporated milk and using a healthy butter such as SmartBalance. I usually love pumpkin pie minus the crust, so for me - this recipe is perfect! I honestly could eat this every night and by making healthy substitutions, I wouldn't feel guilty at all.

Drop Dead Delicious Tuna Salad

I am being generous with one star. Typically, I don't like to give bad reviews...I guess I go by the old philosophy that if you don't have anything nice to say, then don't say anything at all. This recipe is the first time that I am going to say something not nice. This recipe was so sour. I followed the recipe for everything other than the mayo to a "T". I couldn't stomach it. What a disappointment. I guess that I will keep looking for a good tuna salad recipe.

Thai Chicken Cabbage Soup

This soup was delicious! Our family eats a lot of Asian-inspired foods and loved this soup. It is healthy, but don't let that fool you...it's actually good tasting, as well! Add salt and pepper to taste, btw.

Banana Sour Cream Bread

Thank you, Esther! I love banana bread and this is the best. Made it Christmas Eve for brunch and found it to be very moist. The outside sugar is an extra nice touch. I will make this many more times.

Cranberry Pork Roast

This dish is delicious! It can be sweet, though. What we did was use the whole cranberry sauce instead of the jellied. It added a little more tartness to it. I smashed the cranberries up before adding. Also, we use "light" cranberry juice, which has less sugar. One last thing that I do - add the cornstarch mixture in the slow cooker after the pork has been removed and kick the temp up to high. Stir that for a few minutes, and you'll have one fine gravy and one less saucepan to clean. We have this dish about once a month, served with mashed potatoes and corn. It's a favorite!

Basic Quiche by Shelly

I made this for our Christmas brunch this year. Boy did I get a lot of compliments! I made it a few weeks before as a trial run and decided that I needed to make some changes. First change, I baked the DEEP PIE SHELL in the oven (unfilled) at around 325 or 350 for 10-15 minutes. Second, I reduced the half-and half to 1 1/2 cups and increased the eggs to 5. We found the quiche to be too custardy during our trial run. Third, we shredded around 8 oz of gruyere cheese. We didn't use it all, but mixed the amount that we wanted with the eggs. That way the bottom of the crust doesn't get too mushy. We placed ham on the top of the quiche and cooked it. (It will displace during cooking.) As far as the cooking temp and time, fool around with it. Drop the temp and prepare to cook longer. I say drop the temp b/c you don't want your pie shell to get too dark around the edges. I would say that it probably took us somewhere around 1 hr in cooking time. Final result - everyone was asking for the recipe!

Fra Diavolo Sauce With Pasta

This recipe was very good. We are not huge scallop fans, so we used mussels instead. For the sauce, I put the whole tomatoes in the food processor and added a can of diced tomatoes. I will definitely make this again.

Pineapple Angel Food Cake II

I was a little confused by this recipe. Was I supposed to make the angel food according to package and then follow the directions of the recipe or was I just to mix the cake mix (dry) with the pineapple? I made it according to package first, which left it very soggy. Plus, I thought that it was a little tart. I would be willing to try it again if I made it incorrectly the first time.

Old-Fashioned Scalloped Corn

This recipe is a great alternative to regular corn, which I would eat every night if my husband allowed me! The only thing that I changed was that I used 1 can cream corn and 1 can regular corn (scaled down the recipe). By adding regular corn, it had a "cornier" texture, as opposed to just creamy.

Greek Chicken Pasta

Holiday Morning French Toast

This recipe was very good. It was best refrigerated overnight. The only thing that I recommend is that you use a smaller (not as wide) bread, like french, because it is much easier to serve individual portions. The inverted serving method was very pretty, by the way.

Egg Foo Yung II

I thought that this recipe was delicious. I didn't use all of the meat because it seemed to be so much. So I used the pork and chicken and omitted the ground meat. Maybe next time I will try the ground meat. I recommend trying to cut your pork and chicken in smaller pieces when preparing. This helps keep the egg from falling apart when it comes time to flip. The sauce was delicious, too! Thanks for the recipe.

Chocolate Cheesecake IV

I made this recipe on Valentine's Day for my chocaholic sweetie. He loved it. I did use the two crusts, as others had recommended. Thanks! Here's another idea. After it's been in the refrigerator, it's kind of hard. Try throwing it in the microwave. It tastes like a wonderful, moist brownie. Great recipe.
