Roasted Garlic Scalloped Potatoes

Fantastic! I didn't have the soup called for in the recipe so I substituted cream of potato and 3 cloves of minced garlic (we love garlic). I will definitely be making this dish again.

Simple White Cake

Very easy recipe. I tripled the recipe because I needed 36 cupcakes. I must make my cupcakes smaller, because I ended up with 60 cupcakes!

Emergency Chicken

I modified this in that I used individually quick frozen chicken tenders. I cooked the chicken frozen in a mix of butter and olive oil, when the chicken was cooked through I added the sauces and garlic, cooking until thickened. Very tasty, was quite a hit with family and friends that were over. I will definitely be making this again.

Hawaiian Pineapple Chicken

My family loved this recipe, I thought it was a bit too sweet. Next time I will add tad more vinegar for a more sweet and sour taste. I added coarsely chopped onion and extra cornstarch as the chicken was frozen tenders. I served this with white rice and homemade Portuguese Sweet rolls.

Simple Soy Sauce Chicken

I loved the simplicity and the fact that I had nearly everything on hand. I added a bit of apple cider vinegar and olive oil to make up for a slight shortage on the Italian dressing. I also substituted diced frozen chicken breast tenders as that was what I had available. Because of the tenders, I reduced cooking time by about 10 minutes. My family loved this meal and I will definitely be making it again.
