Zucchini Patties

Seriously AMAZING! I had a hard time with getting all the liquid out of the zucchini so I added more flour and it worked fine. My kids ATE IT UP!

One of the best things I've ever eaten! We skipped the mustard and used extra preserves with red and green bell peppers and some jalapenos for heat. I would have never though to put swiss in a quesadilla but it was awesome

Mini Pumpkin Butterscotch Muffins

When this recipe had 5 stars I had to try it! It is worth every star! I made the recipe exactly the way it was written...except I made regular muffins so the cook time was longer. THE BEST!

Rice Balls a la Tim

My family LOVED this recipe! Add some veggies like bell peppers and mushrooms and you can't even tell. Great way to hide the veggies (whichis how we roll in this house...lol) Anyway, highly recommended.

Chimichurri Sauce

This is a wonderful sauce for anything grilled. It reminds me of my favorite Carribbean restaurant in New Orleans. Takes me back to that little table with a white table cloth. You can't go wrong with this recipe.

Blueberry Pancakes

I am always looking for ways to make pancakes sweet so I can leave the syrup in the fridge and make them handy for little ones and this recipe is a complete WIN! I used vanilla yogurt and they were a huge hit.

Strawberry-Melon Summer Salad

This salad is wonderful! However, I would recommend one of two options, either adding the sauce right before serving, or leaving separate for a dip. I LOVED this recipe, and for a little twist I substituted lime juice for the lemon juice.
