Cuban Picadillo

Reviewed: Sep. 6, 2014
If you want the original cuban way, substitute ground chicken with lean ground beef. Serve with fried sweet plantains or tostones and rice.

Delicious & SIMPLE! I will be making this again. I only switch out the frozen spinach for fresh.

Cabbage Rolls II

Reviewed: Mar. 3, 2010
Tasty! Wrapped cabbage has a nice texture and the flavor makes the meat so moist! the only thing I changed was instead of ground beef I used lean ground turkey.

Chicken and Apple Curry

Reviewed: Feb. 9, 2010
Great and EASY recipe! The apples give the curry a unique kick to the flavor. Instead of the milk I switched it with coconut milk to give a thicker, creamer texture and flavor; used chicken tenderloins and cooked them a little before throwin into the curry sauce. I did not bake but cook on stove top and let everything bubble and fuse together like a stew. Delicious! Put together with black Asian wild rice and Naan! Mmm...Mmm...

Holiday Cranberry Chutney

Reviewed: Jan. 30, 2010
AMAZING! Full of you favorite holiday flavors! So easy to make and makes your kitchen smell heavenly! Beats the cranberry in a can any day! I served it with plain Triscuits and cream cheese; then moved it on to the main course and made an awsome side dish... Fresh cranberries are the way to go!

Bacon Cheddar Deviled Eggs

Reviewed: Jan. 30, 2010
Now I know what to make every time a family or friendly gather comes along! Once these deviled eggs are on the table expect no leftovers! They fly right off the plate and into the mouths of your now gleefully happy guests. The only changes I made was reducing the mayonnaise;used turkey bacon, Dijon mustard and added cracked black pepper. Heavenly!

Enchiladas Suizas

Reviewed: Jan. 30, 2010
OMG! This recipe was DELICIOUS!! The salsa verde blew me away. Fiesta for the taste buds! My husband couldn't resist grabbing seconds! The only changes I made was cooking the chicken in low-sodium chicken broth then shredded;reduced the cream, butter, salt and swapped out the canola oil for olive oil. Oh! You could never add to much cumin! Mmm... mmm...The leftovers are just as good! :D Saving this in my recipe book!
