Creamy Squash Soup

Just tried this-I used leftover vegetarian stew (squash, cinammon, chili powder and a can of chili beans) because I wanted to use it up and I didn't put it through the blender as my husband has trouble digesting foods that are not whole. It was really good. I also used smoked bacon as it gives it more taste. We ate ours with home made bread and it was delicious!

Caramel Shortbread Squares

Great Recipe-I love these squares and have been wanting to make them for a loong time. I doubled the recipe instantly (we have 9 teenagers), boiled the caramel on n°3 out of 9 on my hob and it was brilliant. For those of you who said it was too sweet, I used unsweetened condensed milk.

Cornflake Cookies II

Here's what I did-I made 1 and 1/2 times the recipe, put in 2 eggs (1 and !/2 would have been difficult!), doubled the raisins (soak in hot water for 10 mns beforehand), and substituted baking soda for baking powder. I flattened the teaspoonfuls of dough with a fork dipped in sugar and followed the cooking time. They were great!

Consomme Pork Chops

I make this the other way round. Put pork chops in the bottom of an oven proof dish with a lid. Cover with 1 cup of rice and a sliced onion. Add one can of conentrated consomme and no water. This has a lot of taste if you don't dilute it! Cook in a medium oven for a round 45 mns-1 hr.

Fast and Easy French Onion Dip

My mom used to make this using just the sour cream and the onion soup. You don't need the whole package if you don't want a dip that's too strong. Start with the sour cream and the add a bit of soup and taste as you go along. The taste gets stronger as it sits. If you want some lighter fat potato chips to go with this, make your own! Slice whole potatoes (fairly thinly) rince in cold water, then dry. Line a baking tray with grease proof paper, spread the potatoes in one layer, brush lightly with olive oil and bake around 15 mns at 400 degrees in a preheated oven.

Apple Maple Crumble Pie

I made this using muesli instead as rolled oats are difficult to find in France and it turned out fine. My advice if you use plain muesli, add a bit less as it soaks up liquid. You can also use the crunchy variety and stick to the recipe. I also use muesli in cookies (as a substitute for the oats in Dad's cookies) and as a topping mixed with cream for apple pie!
