Quiche Lorraine I

This was a great recipe! Probably the best quiche I've ever made. The only alterations I made were leaving out the sugar and using 1 1/2 cups Swiss cheese, because that's what was in the package, already shredded. As many others did, I also sauteed the onions in some of the bacon fat. I did not put foil on the edges of the crust and it was fine. The inside was firm and not runny, and I cooked it exactly as instructed. Also the eggs were very light and fluffy. I would definitely make this quiche again!

Healthier Baked Ziti I

Great recipe! I used rigatoni past instead of ziti. Also, I forgot to buy the provolone cheese so I just used the cheeses I had on hand, which were mozzarella and Parmesan (I used a whole 8-oz bag of mozzarella and about half of an 8-oz bag of Parmesan) and it was fabulous! I also omitted the carrots. I loved how the sour cream tasted after it was baked. I will definitely make this dish again.

Fiesta Stuffed Peppers

This recipe has potential. I made these for my boyfriend and I the other night and followed the directions exactly since it was the first time making them. I agree with other reviewers that they were pretty bland. Pre-cooking the meat and onion with a taco packet I think would give it an extra kick. Also, I thought that these had way too much onion. I would recommend using only half an onion. Our other critiques included reducing the amount of ground beef to a pound (just because of the size of the bell peppers) and maybe adding a little extra rice into the mixture. Once the peppers came out of the oven, I did add some cheese to mine and microwave. I would probably mix some cheese into the mixture or on top for extra flavor as well. I would definitely try it again with a few changes to give it some added flavor!
