Refreshing Limoncello Cake

Reviewed: Oct. 9, 2010
Very yummy! Instead of making a cake - I spread the batter into my muffin sheet. Made 12 awesomely moist limoncello muffins! Baked for 23 minutes.

Chocolate Peanut Butter Squares

Reviewed: Oct. 6, 2010
These were good but not nearly as good and creamy as the Reese's Peanut Butter Cup. Reading the reviews, I eliminated the butter in the chocolate topping and increased the amount of graham cracker crust and chocolate chips used. 4 cups of confectioner's sugar?? My gosh.

Slow Cooker Beef Stroganoff I

Reviewed: Oct. 6, 2010
Very good but not quite a 5 star. The suggestion of doubling the soup for a more saucy stroganoff was quite helpful as well as adding sauteed mushrooms the last 1/2 hour. The cream cheese did not melt and stir into the stew as nice as I would have thought - you could see minor clumps here and there.

Baked Cheese Olives

Reviewed: Oct. 6, 2010
A very yummy lightweight snack! The dough is a bit dry to work with at first, but the more you work it with your hands the more pliable it gets! The suggestion of adding one more Tablespoon of butter was a great one :)

Surprisingly, this wasn't that spicy at all. I followed the recipe to the tee, too.

Baked Potato Soup

Reviewed: Sep. 26, 2010
The taste is great, but the potatoes are virtually raw in this recipe. I recommend boiling the potatoes so that they are cooked and softened to make this soup more like a chowder.

Tomato Chicken Parmesan

Reviewed: Jul. 21, 2010
Excellent tasty dish and fairly easy to put together! Best review tips: 1) Pound chicken breasts to 1/2" thickness 2) After breading, set in fridge for 1/2 hour before sauteeing 3) Add cheese slices the last 5 minutes of cooking. And my one addition - cut each breast in half so that there is more yummy breaded pieces to go around!

Pepperoni Stuffed Mushrooms

Reviewed: Jul. 1, 2010
Absolutely incredible! My gosh are these tasty! Didn't change a darn thing in the recipe - it's perfect. The chicken broth cooks the mushrooms perfectly, so sauteeing the mushrooms before stuffing them (as noted in other reviews) is unnecessary.

Butter Fried Parsnips

Reviewed: Jun. 30, 2010
Very Yummy! Double the Flour and Seasoned Salt amount + add 1/2 tsp of black pepper for more flavor! This might cook better in a mini fryer as it leaves your frying pan a gross mess with the flour/butter build up!

Mom's Coleslaw

Nice, simple recipe. Doesn't keep too long, though - gets pretty runny the longer it sits around.

Refried Beans Without the Refry

Reviewed: May 26, 2010
The beans turned out pretty good. I wouldn't say I'd choose this over Taco Bell's refried beans, but it's good to have around the house and dip nachos into.

Tequila Shrimp

Smells great while you're cooking it, but overall, it tastes quite bland. And, I followed the recipe as is - no modifications.

Irish Bananas

Reviewed: May 16, 2010
What a great idea for cooking up bananas! Per banana, I used 1 Tbsp butter, 1/2 tsp cinnamon and 1/4 c liquor (I actually used coconut flavored rum since we had it laying around the house). Being diabetic, I left out the extra sugar and it didn't hurt the recipe one bit.

Unbelievably delicious! Wow. Thanks for sharing this great recipe! It is time-consuming on the shredding chicken part, but, as you said, it's well worth it. My gosh, I wouldn't change a darn thing with this recipe :)

Red Skinned Potato Salad

Reviewed: Apr. 11, 2010
This potato salad was awesome! Definitely make this with regular onions instead of green onions (as others have swapped ingredients in their reviews) - this only enhances the texture and flavor of the potato salad. Surprisingly delicious with just salt and pepper for flavor enhancement!
