Chicken Wild Rice Soup

Good soup. Butter/flour roux mix not necessary - just sift the flour into the soup toward the end. Shredded chicken much better texture-wise than cubed. If you cook up 1 c of wild rice - you'll get anywhere between 3 to 4 cups worth. Dump all the rice in the soup - this will only make it heartier!

Hudson's Baked Tilapia with Dill Sauce

I read virtually all the reviews prior to making this. I stuck to the recipe. The fish was not too dry when baked (the lemons add moisture). The salt was not overpowering with the Cajun seasoning. And, yes, the sauce was to die for as everyone else has already stated! The coolness of the sauce is a great counter to the Cajun seasoning. Excellent recipe - it goes in 'the keeper' file.

Monte Cristo Sandwich

Very good! Perfect with a side of strawberry preserves/jam. 1 egg + 1/2 c milk is enough to coat several sandwiches. The mustard mayo spread gives an interesting perk to this sweet sandwich!

Carrot Souffle

I was hoping for more of a carrot flavor, but this came out light, fluffy, and eggy. Took the suggestion of topping it with cinnamon and nutmeg - this did give it needed flavor. Unfortunately, I also took the suggestion of using just 1/4 c Splenda. Minimum of 1/2 c sugar is needed to make this dish taste right.

Farmhouse Chicken

Wonderful! Even added the 1/4 tsp salt as the recipe indicated and I did not find it to be too salty as others have said. Very tasty recipe! Instead of using the stuffing as the cover, I blended it with the soup mixture a wee bit before adding to the oven. It turned out beautifully moist!

Cream of Cauliflower Soup II

Great ingredients. Nice, thick soup. Unfortunately, there's just no incredible flavor. Topped each of my servings with lots of shredded Sharp Cheddar Cheese plus Paprika and it was pretty good.

Jalapeno Hummus

Yummy indeed! I used 1/3 cup of fresh jalapenos and 1 Tbsp of the Garbonzo juice to prevent dryness. What a wonderful spread!

Pumpkin Muffins II

Very moist and delicious! Be aware, though, that these ingredients make more than 12 muffins! The only thing I had left in the house to use was a mini muffin pan. So I made 12 normal sized muffins + 16 mini muffins. :) No complaints here!

Spiced Pumpkin Seeds

Wow! First time I've ever baked a pumpkin today as well as made use of the seeds! Holy cow was this yummy! I took the suggestion of baking the seeds for 1 hour at 300, then adding grated parmesan cheese and baked 8 minutes more. Dang are these good! Rating . . 5 stars plus some . . .

Pasta Bake

This is a good basic pasta recipe. Add more ingredients to make it tasty. 2 cloves garlic, 1/4 c sliced green olives, 1 package sliced mushrooms (not canned), 1 Tbsp Italian seasoning, 1/2 tsp salt, 1/2 tsp pepper. I also used egg noodles for the pasta because I just love the texture of them :)

Beer Cheese Soup VI

Nice light tasting soup! I wish it were a little thicker, but I couldn't NOT use a full can of beer - that'd just be . . wrong. Used just 1 Tbsp butter to saute all the veggies and it worked just fine. Also, pureeing the entire soup made a wonderfully consistent tasting/textured soup!

Refreshing Limoncello Cake

Chocolate Peanut Butter Squares

These were good but not nearly as good and creamy as the Reese's Peanut Butter Cup. Reading the reviews, I eliminated the butter in the chocolate topping and increased the amount of graham cracker crust and chocolate chips used. 4 cups of confectioner's sugar?? My gosh.

Slow Cooker Beef Stroganoff I

Very good but not quite a 5 star. The suggestion of doubling the soup for a more saucy stroganoff was quite helpful as well as adding sauteed mushrooms the last 1/2 hour. The cream cheese did not melt and stir into the stew as nice as I would have thought - you could see minor clumps here and there.

Baked Cheese Olives

A very yummy lightweight snack! The dough is a bit dry to work with at first, but the more you work it with your hands the more pliable it gets! The suggestion of adding one more Tablespoon of butter was a great one :)
