Chocolate Sheet Cake I

Just made this for my son's 9th birthday. He is a chocolate lover and he and his friends ate until the last bite and asked for more. Said it was the best chocolate cake ever!

Banana Cream Pie I

great custard filling but bananas were not just brown, but black. Should I have soaked in lemon juice or does cooking just cause this anyway? So, I'll give 4 stars since it was great if you didn't look at the black bananas:-)

Black-Eyed Pea Gumbo

Really good--made for New Year's Day but will make again befpre next year. I made in slow cooker and did not add brown rice (not instant rice) until mid day. Cooked a total of 6-7 hours, mostly on low until the last hour. Also used two cans of Rotelle (mild)

Really good and much healthier than fried chicken. Surprisingly, liked the mayo coating--really kept chicken juicy during cooking. My children enjoyed!

Southern as You Can Get Collard Greens

My husband loves collards and I've made them a number of times. After using this recipe, he said, "you finally got it" these are super! I did ad both chicken broth and some pork to flavor. Even my little boys decided that they finally like collards!

Strawberry Cake I

Very good! Questioned whether the jello would give a fake flavor, but delicious. Made in two layers--Also used the pineapple filling (substituting strawberries) and frosted w/ cream cheese icing! Will make again!

Hearty Baked Rigatoni

Really, really good & tastes more complicated than it is! I did not have ricotta so used heavy creme as one reader suggested. Also used "Italian blend" of cheeses rather than just mozzarella and parmesan. My boys (9 and 11), friends, and husband loved it! A full meal with a salad.

Fresh Tomato Pie

really good and easy! I layered tomatoes over the top of the level of the pie shell. Fresh basil and ripe tomatoes are the key!! My husband said that I could open a restaurant with just this and sweet tea!

Berdean's Cube Steak

Super--very hearty! I normally fry cube steak and then make gravy. This was much more flavorful, tender and the gravy makes itself! I added onions and mushrooms but changed nothing else--mmm! Both my boys and husband ate it all!

Broiled Scallops

They were good--surprisingly so. I was skeptical since I started with little frozen "bay scallops". I used some Old Bay with the butter and lemon juice and just broiled for about 8 minutes. will make a gain
