Aussie Chicken
WOW! This was so simple (great for me!) and came out incredibly good. My fiance was a very happy man! I did change this recipe up a tiny bit to suit our tastes. I first pounded 2 chicken breasts, sprinkled with a small dash of salt and pepper and soaked it in Worcestershire since I didn't have time to marinate. While I was preparing everything else I just let it sit. About 5-10 mins. I excluded the mushrooms and onions since I am not a fan. While I fried the bacon in a skillet, I took 1/4 c each of a spicy hot mustard, a honey mustard, mayo and a tbsp of honey which I basically eyeballed then stirred. No corn syrup. I didn't want the extra sugar and it seemed really good without it. I browned the chicken in the same skillet after the bacon was done adding a bit more Worcestershire sauce. I then just transferred the chicken over to a 8x8 pyrex dish. I placed the sauce on top, then bacon, then a light hand with the cheddar cheese. I'd say 1/4-1/2 c. Then I put foil on top and baked for 15 mins. Took the foil off and baked for about another 10-15 mins. Just watching it to make sure it didn't over cook. The end result was fabulous and my fiance couldn't get enough. He's a bacon man so this made his night. Plus it's really simple to put together. Thank you for the recipe!

Pumpkin Swirl Bread
This is really good! I made the cream cheese mixture and the pumpkin mixture according to the recipe. However, I made them into muffins/cupcakes. I lined the muffin pans with liners then put a tbsp of pumpkin in the bottom of each liner. Then took the cream cheese mixture and put a tbsp of each then topped with a teaspoon of pumpkin mixture. I swirled it with a knife and baked at 350 for 22 minutes like another reviewer suggested. They came out perfectly done and SO MOIST!! There's only a hint of cream cheese flavor but it's delicious! There was a little bit of the cream cheese mixture left over. I got 17 muffins. Try it like this and you will not be disappointed!!

Caramel Macchiato Ice Cream
My fiance and I love this ice cream! It's so easy and you can play with it a little to get it to your liking. I actually made mine with splenda but you could probably use truvia (which is the better substitute now) and it was still very good. I did have to wait a little bit to have it reach a good consistency after putting it in my ice cream maker. This is perfect for the coffee lover and I would go as far to say even someone that only moderately likes coffee would enjoy this- it's THAT GOOD!
