Slow Cooker Beef Stew I

Dawn's Easy Red Velvet Sandwich Cookies

Visually attractive & extremely rich cookie. Great for visual impact, but you need a large crowd who will eat them quickly since the icing needs to be refrigerated ... and most folks can only eat one.

Chocolate Sandwich Cookies II

These cookies were great, by themselves or as a pair. I used a different icing, part vanilla and part peanut butter mixed together that created a lovely combination. People loved them and I will definitely make them again.

Sean's Falafel and Cucumber Sauce

Made this today & served it in pitas with a modified dill sauce, feta cheese, cucumbers, and tomoto slices. It was tasty and very filling, with a couple adjustments. I added more bread crumbs and used the Fry Daddy instead of on the stove. Next time I will add more spices just because we like it that way.

Slow Cooker Texas Pulled Pork

Made this twice now and it turned out great both times. The only change to the ingredients was that I left out the onion (because a member of our family objects to them strongly), and it was still great.

Caramel Filled Chocolate Cookies

While these cookies are not the most dazzling in appearance, they certainly make up for it with taste (my husband has named them Happy Fun Rocks). I adjusted the dry ingredients as suggested, and used the "work up from the bottom to make a pocket around the rolo" method. Worked great, no leaks, just a LOT of tasty cookies ... and I already have requests for more.

Lemon Mushroom Herb Chicken

Wonderful base for a flexible recipe ... like a lot of reviewers I left out the capers and the lemon zest (used them in other things and found them to be too much for our taste). I also followed the suggestions and used an egg coating to help the flour mixture a bit. Overall it was fairly quick and definitely wonderful, and my husband now requests it at least once a week.

Awesome Slow Cooker Pot Roast

This really is awesome. I made it today as my first pot roast, and my husband was so proud to serve it to our friends ... we knew it would be good when we tried to lift it out of the slow cooker and it literally fell apart! I seared it first as some other folks have suggested, using flour, garlic salt & some Cajun seasoning. For the soup mixture I used beef broth instead of water, and Mushroom Onion flavor for the dry soup mix. I am a rookie so I forgot the vegetables until about 2.5 hours before the end, but added carrots and onions at that point and it still turned out great. It does make a lot of gravy so I made mashed potatoes. Everybody had seconds and some people even had thirds. I could not be happier with this recipe & can't wait to make it again!

Chocolate Fudge Cupcakes with Peanut Butter Frosting

This frosting is great, especially for chocolate & PB fans. You may have to experiment with the proportions a bit to find a consistency you like, but I have made these twice now and everybody loves them. I will definitely be making them again!

Sausage and Apple Stuffing

Made this today for the Thanksgiving feast and it got rave reviews, even from my mom who usually does not like stuffing. I used Zatarain's stuffing for the base to add some spice (one package of the cornbread and one package of the french bread, so we had different textures) & followed the suggestions of other posters and cooked the stuffing part in chicken broth part in water. Since my husband hates celery I used crushed almonds instead, and for apples I used Gala apples which gave it a bit of a sweet to offset the spiciness of the stuffing. The sausage was J.C. Potter regular, and the consensus was anything else would have been too much with that combination. It took a while to prep but was VERY worth it, and I could not be more pleased. I already have requests to make this again next year!
