The Best Vegetarian Chili in the World
Very good. Modified based in what I had. Cooked chopped onion (1/2 of a large white onion) in the olive oil in a skillet until soft then added a large red pepper, celery, and garlic, about 4 gloves. Put all in slow cooker and added 1 can of each- black beans, garbanzo, pinto, and red kidney. Added 1 28 oz can diced tomatoes.cooked on low for about 3 hrs then added 1 can crn and kept on low for about 2 more hrs For spices I used 1/4 cup chili powder as called for, oregano as called for, salt and pepper to taste and about 2 tsp cumin. I did not have the chile peppers or jalapeƱo peppers that the recipe called for or the veg burger crumbles but I thought it was really good with the ingredients I used. Lots of flavor!!

Slow Cooker Chicken Taco Soup
This turned out really good. I doubled the recipe so I could freeze some and used salsa instead of tomato sauce. Added a few cloves of garlic. Used fresh corn cut off the cob (cooked, three ears of corn). Served in a bowl with a little sour cream, shredded cheddar cheese and tortilla chips. Would also be good as a filling for tacos or borritos.

Spicy Turkey Chili
This was delicious and my husband loved it too. I did change some things... 1 lb ground turkey which I browned with chopped onions and garlic. I used 2 cans stewed tomatoes, 2 cans diced tomatoes and 2 small cans tomato sauce. 1 can green chillies. 1 lg can kidney beans and 1 lg can red beans. I used 1 packet of taco seasoning mix bc I didn't have chili seasoning mix. I think the taco seasoning gave it a really good flavor. I added minced garlic and chili powder probably about a tbsp and a dash of cayenne pepper. We added shredded cheese and wrapped it in heated tortillas. Delicious!! Next time I might make it with about 1 1/2 lbs ground turkey meat.
