Chicken In Basil Cream

I was looking for a way to use some of the Basil I have in my garden and came across this little gem. It was so easy, I really didn't have high expectations, but it is fantastic. I followed the directions, except I used a jar of roasted red peppers. As always when I am breading chicken, I flattened it slightly with my meat mallet, browned it on both sides, but threw it in the oven for 10 minutes to finish cooking (I think this makes for a more tender chicken, and I can finish the sauce on the stove while the chicken cooks in the oven). I served over Angel Hair Pasta, but next time will double the sauce if I am serving over pasta.

Brie Cheese Appetizer

Just made this over the weekend for a Christmas Party and already had to email the recipe to 4 people. It was a huge hit. I made exactly as written, but used Raspberry preserves instead.

Tomato Chicken Parmesan

The fact that this recipe is so incredibly good, yet so fast and easy completely stuns me. I am never afraid of making complex, time consuming meals and often prefer to, but you simply cannot make better Chicken Parm than this. The one step I would never leave out is to flatten the chicken breasts. Like a few other reviewers, I also cook my chicken on the stove-top for less time than the recipe calls for - it is still pink on the inside when I put it into the oven on top of the sauce. I like for the chicken to finish cooking with the sauce. I probably cook it for about 20 minutes in the oven, then put the cheese on top and cook for another 10 or so minutes just until the cheese is bubbly. Simply fantastic!

Pesto Chicken Penne Casserole

Fantastic! Made it exactly as written and my whole family was delighted. As is often the case with pasta, the flavors "married" overnight and the leftovers rocked! I am pleading with those of you who feel compelled to give a negative rating to a recipe you've never tried to please resist the urge. If you read the ingredients and decide it is not for you because of calories, salt, fat, or whatever, why are you even reading the reviews and adding your opinion? The rest of us are not interested in your lecture, but rather the experiences of those who have actually made the recipe.

Grilled Lemon Chicken

Made the chicken exactly as written, except I marinated it longer - for about an hour. I was stunned at how flavorful and tender it was. Super easy, and something that will absolutely go into our regular rotation.

Italian Spaghetti Sauce with Meatballs

The only thing bad I can say about this sauce is that I am depressed that it took me this long to find it. I have probably tried dozens of recipes for the perfect sauce over the years, and while some are better than others, overall I always just felt like something was missing. At first I almost didn't try the sauce because it sounded so darned easy and had so few ingredients. I am so glad I did - it is literally what I've been looking for my whole life. I cannot comment on the meatballs because I didn't make them. I have made the recipe as written about a half a dozen times. The only change I make is a slight one - I add ground beef with the onions and garlic, because we like a meaty sauce. At the end, before I serve, I remove the bayleaf and use my emulsion hand blender to blend the sauce in the pan so that it is a smooth sauce (kids hate large pieces of tomato in their sauce. The result is literally a thing of beauty, and it clings to the pasta perfectly. If you are not preparing to make this sauce right now, you are missing out!

Sarah's Rice Pilaf

This was just what I was looking for. The only change I made was to add a sprinkle of saffron when I addded the broth, then a couple of tablespoons of white wine because my mixture was a bit dry. I completed it with some fresh parsley and my family said it was the best rice I had ever made. Served it with Tilapia, which was perfect. Thanks Sarah!

Chicken Tinga Tostados

So good! I followed the recipe pretty much to the letter, except I didn't have quite enough onions and it was still fine. Don't be tempted to skip the chipotle peppers, as they add the best smoky flavor that make these so special.

French Toast I

The only problem with this recipe is that it has ruined my kids from eating any other French Toast anywhere! Don't be tempted to skip the optional ingredients - they all play an important role, even the salt which really acts to bring out all the other flavors. I always make a double or triple batch so I have a cookie sheet ready in 300 degree oven and I put each slice on it to keep warm as I continue to cook the rest. This is also a great technique if you find some of your toast is stil kind of soggy.

Fabulous Foolproof Lasagna

This is my first attempt at Lasagna and I thought it turned out wonderful. I used a bit more spaghetti sauce because my family likes lots of sauce (I used about 24 oz.) For those of you that feel the need to give a low rating to a recipe you've never made (special shout out to Paula G and Claylady), I wish folks would just stick to giving feedback on their actual experiences with the recipe as written, not with your disdain for the ingredients. All of us reject tons of recipes all the time because they don't sound like something we would like - what we don't do is give them a low rating without even trying them.

Veal Scaloppini with Lemon Cream Sauce

This is my new favorite recipe from this site - and that is saying a lot. It reminds me of a dish I get at our local Italian Restaurant. Since I'm not a huge Veal fan, I used Chicken Breasts, which I pounded very thin. I added about 1/2 tsp. of Lemon Zest, as well as parsley at the very end. I served over Angel Hair Pasta and the reviews from the family were over-the-top.

Cracker Candy

I am constantly amazed at the reaction I get whenever I make this candy - EVERYONE loves it! It is so fun to see the reactions from people when they realize it is made from regular saltine crackers. It is quick, it is easy, and you will be a rock star. I make it exactly as written.

Grilled Shrimp Scampi

This is a staple in our family during the summer. We throw them on the grill and enjoy with a nice glass of white wine. I do like to add some fresh basil and a splash of white wine with the other ingredients. Perfect!

Prize Winning Baby Back Ribs

I cannot believe I've never reviewed these ribs. Since I've started making them, no on in my family would dare to order ribs at a restaurant. These are just that much better (and much cheaper - buy them at Costco) I do it a bit differently, as I like to bake them in the oven on about 300 degrees for a couple of hours after applying the dry rub. When they are done, I put on the BBQ sauce and throw them on the grill to get that nice crust. Delish!

Blueberry Pie

Was looking for the perfect recipe for my first ever attempt at making a Blueberry Pie. Based on the great reviews, this was my pick and I'm so happy with my decision! Based on other reviews, I added an additional teaspoon of cornstarch, and also about a teaspoon of lemon juice. It turned out perfect! My hubby said I could win a contest with this recipe!

Asian Beef Skewers

Made this for a big Christmas party with very high hopes. For me, it was just "okay". Might be better as a main dish, but I found that it didn't taste very good when no longer hot, so not the perfect option for an appetizer buffet. It is also quite a bit of work.

Antipasto Pasta Salad
