Chicken In Basil Cream
I was looking for a way to use some of the Basil I have in my garden and came across this little gem. It was so easy, I really didn't have high expectations, but it is fantastic. I followed the directions, except I used a jar of roasted red peppers. As always when I am breading chicken, I flattened it slightly with my meat mallet, browned it on both sides, but threw it in the oven for 10 minutes to finish cooking (I think this makes for a more tender chicken, and I can finish the sauce on the stove while the chicken cooks in the oven). I served over Angel Hair Pasta, but next time will double the sauce if I am serving over pasta.

Brie Cheese Appetizer
Just made this over the weekend for a Christmas Party and already had to email the recipe to 4 people. It was a huge hit. I made exactly as written, but used Raspberry preserves instead.

Tomato Chicken Parmesan
The fact that this recipe is so incredibly good, yet so fast and easy completely stuns me. I am never afraid of making complex, time consuming meals and often prefer to, but you simply cannot make better Chicken Parm than this. The one step I would never leave out is to flatten the chicken breasts. Like a few other reviewers, I also cook my chicken on the stove-top for less time than the recipe calls for - it is still pink on the inside when I put it into the oven on top of the sauce. I like for the chicken to finish cooking with the sauce. I probably cook it for about 20 minutes in the oven, then put the cheese on top and cook for another 10 or so minutes just until the cheese is bubbly. Simply fantastic!
