Todd's Famous Blueberry Pancakes

Reviewed: Feb. 23, 2010
Followed the recipe to a T and was very disappointed. The pancakes were very rubbery and didn't have much taste at all.

Pasta, Broccoli and Chicken

Reviewed: Dec. 24, 2009
You definitely need to add spices to the chicken while cooking it otherwise it comes out very bland. I cooked the chicken in a little olive oil and added basil, garlic, and lemon pepper. I also added slightly more pesto than called for. All in all it was quite tasty!

Taco Pie

Reviewed: Dec. 20, 2009
Very quick and easy recipe! The only change I made to this was to add hot sauce between the sour cream and cheese, otherwise it comes out very dry and doesn't have much taste.

Slow Cooker Chicken and Dumplings

Reviewed: Dec. 20, 2009
This is a good recipe, and much easier than my grandma's chicken n dumplings. It definitely needs some seasoning though. I add parsley, cumin, basil, and garlic to the soup mixture and instead of using water to cover I use chicken broth. I also added 2 tablespoons of flour mixed with cold water before adding the biscuits, just to make the sauce a little thicker. When it comes to the biscuits I only use 1 can of dough and cook them for about two hours. I take the biscuits and thin them out a little and then cut them into quarters, pushing then down into the soup mix so they taste like dumplings. I have also made this recipe with and without adding carrots and it doesn't seem to make any difference.

Slow Cooker Lemon Garlic Chicken II

Reviewed: Dec. 20, 2009
The first time I made this recipe I followed the it as directed and it came out very dry and bland. Since then I have made it several times with these changes: I omit the water, lemon juice, and chicken bouillon and use 1 cup chicken broth with a few tablespoons of a lemon pepper marinade, add the garlic and parsley with a little onion and cook on low for 4 hours so the chicken doesn't come out dry, and serve it over rice.

Chicken Quesadillas

Reviewed: Dec. 20, 2009
These were easy to make and very tasty! However, I had to add additional spices to the chicken since the fajita seasoning was bland. In the future I will omit the fajita seasoning and use cumin, garlic, pepper, little chili powder and salt instead. I also didn't add as many peppers as the recipe called for.

Corn and Zucchini Melody

Reviewed: Dec. 20, 2009
Good recipe! My husband who hates zucchini ate this and even said i could make it again. Instead of using the bacon drippings to saute the veggies I used EVOO and it came out great! I also added some minced garlic to the skillet. It is good with or without the cheese.

One-Dish Chicken and Stuffing Bake

Reviewed: Dec. 20, 2009
I am giving this 3 stars because it was quick and easy. My family thought this recipe was very bland and tasted like something out of a can. If I ever make this recipe again I will definitely add more seasonings.

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Dec. 20, 2009
This is a good basic fudge recipe, however, using an 8x8 pan the fudge came out way too thick. Also, next time I will double the chopped nuts.

Easy OREO Truffles

Reviewed: Dec. 20, 2009
My husband and I made these for the first time last night and they taste great! If you don't have a food processor I recommend taking the filling out of the oreos before crushing them with a rolling pin, and then just add the filling to the mixture. Also, as for dipping them in the chocolate, I found it worked best to stick the balls in the freezer for 15-20 minutes, and then dip them in chocolate using a tooth pick. We tried covering them with chocolate using a spoon as some suggested but it was very messy!!! Next time we make these I will use milk chocolate or even white chocolate. Great recipe!
