Chocolate Mousse Cake

sooooo good JUST how it is. i made this and added a layer of mashed fresh raspberries in the middle of the cake. soooooo delicious. i also had a bunch of the mousse left. so we sliced some strawberries and snacked! YUM! note: i used this in a cake covered in fondont. it was gooey and ripped the fondont so this isnt the greatest for frosting if you need to cover the cake with fondont. it may be ok if you let the mousse sit for a while so it isnt so gooey. (but it may not be as good then)

Marshmallow Fondant

it was easy UNTIL i had to start using my hands! TAKE OFF RINGS! this is sooooo sticky until you add enough powdered sugar to make it like a dough. i couldnt even get the bag of powdered sugar and had to wait til someone came to the kitchen to help me. KEEP the bag NEXT TO YOU. i needed far more than the recipe said. but in the end, it was worth it. i didnt color it, but i imagine it would be easier to color it in the earlier stages rather than trying to mix it once its made. it covered 2 (side by side) large rectangular cakes. and i have extra. the only other part that was hard was rolling it out. i needed it big, and it was rather stiff. when i got it as big as i wanted it, it was still kinda thick, but thats no big deal. IF YOU ARE MAKING FIGURES, keep the powdered sugar by you. as it gets warmer it gets stickier. so sugar on the table and your hands, makes it much easier! OH! when the recipe calls for 1/4 cup of butter--IT DID NOT HELP ME. its for buttering up your hands...i would consider trying something else to grease your hands. or just using powdered sugar. i also wanted to mention that it keeps the cake nice and moist longer than just frosting it. (which makes sense) we didnt eat the cake for quite a few days after i made it, and it tasted fresh and moist! i hope this helps! good luck, and its worth it! NOTE: vodka is better than water to get the powdered sugar off at the end and to make the cake shine. water just makes it sticky. but be sure to brush it THIN.
