Salmon in Lemon-Dill Sauce

We tried this tonight and it was very good. I used only 2 tblsp butter to saute the garlic (no shallots) and used fat free evaporated milk instead of the heavy cream/milk. I then used corn starch to thicken as mentioned. I used this over tilapia and baked it. It was very good. Next time I will either add capers or dijon to give it a little zing. The evaporated milk sweetens it up quite a bit. I loved it though and can't wait to make it again!

Sweet Club Sandwich

Even though I had chicken (which I thought was turkey) it was really good! Boys loved it. Next time would love to use Cranberry sauce instead of raspberry.

Spaghetti Squash I

I love spaghetti squash. This took a lot longer to cook though. Next time I will cook the squash ahead of time. Will also ditch the tomato and add kalamata olives for a Mediterranean taste. Liked the recipe as is though too.

Broccoli, Rice, Cheese, and Chicken Casserole

My entire family loved this! I made some suggested alterations. I pre-cooked a whole chicken and shredded the meat. I made my rice with chicken stock, I added 1/2 a package of savory herb with garlic soup mix instead of onion, and I ditched the processed cheese for a less amount of Colby/Jack. I also used I can chicken soup and 1 can mushroom. Although I did use the entire amount of butter called for, next time I will reduce it. The chicken stock rice adds enough flavor and it isn't worth the extra fat for us. Add a tossed green salad and it was perfect!

Cabbage Rolls II

I loved this following the recommendations. I added garlic, used onion flakes for time, and used a jar of spaghetti sauce to encourage my 4 and 7 year olds to eat it. Perfect! The freezer method with the cabbage was brilliant. I am shocked at how easy this was, and it can be altered to different tastes using various herbs and sauces. Thank you!
