Cajun Pasta Fresca
Very tasty, thank you! I used a 28-ounce can of Muir Glen diced tomatoes, added 1lb. of shrimp (which I sauteed in the oil and garlic prior to adding tomatoes) and The Spice Hunter cajun seasoning. I ended up adding more cajun seasoning due to personal tastes. Even my son who normally doesn't like anything with "hot" spices loved it.

Addictive Sweet Potato Burritos
We loved this recipe as is! I was curious about the odd combination of ingredients, but it comes together nicely and tastes fantastic. While cooking, I was concerned that the amount of liquid in the bean mixture seemed like way too much but it turned out fine the way I assembled the burritos. First, I spread some of the sweet potato mixture onto the tortilla, then added the bean liquid on top of the sweet potatoes, then a little cheddar cheese. After folding them burrito style, I used the leftover bean mixture to pour over the top, then added more shredded cheddar. I served the burritos with sour cream and Near East brand spanish rice. Melt - In - Your - Mouth Shortbread
True to their name, these cookies do melt in your mouth and they are very tasty (if you prefer a less sweet cookie). My family likes the flavor a lot, but we prefer a cookie that is a little more firm. Still giving 5 stars as this is just our personal preference.
