Quinoa Salad with Dried Fruit and Nuts

This was delicious! I love quinoa. I always try to follow the recipe to the T, but I didn't have raisins or pecans so I used dried cherries and chopped walnuts instead. The flavors were still really good. This is good as a cold salad too.

Nut Butter Balls

These were really good. These remind me of cornstarch/melting moments cookies. They are light and crispy and melt in your mouth.

Big Soft Ginger Cookies

I was looking for an easier version of gingerbread cut-outs and these are them! They are very tasty and chewy. One thing I had a problem with is that the bottoms baked quickly/burnt. I think it might've been because I used a cookie sheet with sides. Just a warning for others.(I was able to salvage all but 4 cookies).

Cucumber Sandwiches I

These were a hit and went very quickly at a party I made these for. Very easy to make! I followed the recipe exactly, although I probably got 24 servings out of the recipe versus 15. I also sprinkled each with some parsley.

Spiced Pumpkin Seeds

I never made pumpkin seeds with Worcestershire sauce and was a little concerned about how "soupy" it was when I put it in the oven. The seeds came out perfectly crisp and I'm still eating them!

Mexican Bean Pie

I made this tonight and love it, although I did not follow to the T. I didn't veer too much off the original recipe! I used 1 can of corn instead of 1/2 can (I like corn), used corn tortillas (my preference over flour), omitted the green pepper (don't like) and olives (would've used, but didn't have), and added a can of green chiles (did have on hand) after reading other reviews regarding blandness. This is a Mexican version of comfort food!

Overnight Vegetable Salad

This was awesome! I am always looking for something different to do with mixed veggies and brought this to a BBQ. Everyone was amazed that mixed veggies could taste good (the entire dish was all gone)! Very easy to make. I followed the recipe to the T and didn't make any modifications.

Laura's Quick Slow Cooker Turkey Chili

This was really good! I am not a fan of tomato soup so I used 1 can of the soup and 1 can of tomato sauce. I also used ground chicken instead of turkey and added 1 cup of frozen corn. It was the perfect consistency. Other than that, I used all the spices as noted and the flavoring turned out really good after simmering all day.

Microwave Caramel Popcorn

I remember making a recipe like this in a H.S. Home Ec class and I'm glad I found it again! It was yummy! I only had light butter popcorn on hand (in the bags) so I omitted the salt. It still came out great!

No-Sugar-Added Blueberry and Banana Wheat Muffins

I made this for a diabetic person and unfortunately, it didn't come out well. I've made other fruit/no sugar breads, but this came out rather bland, unless you spread butter or jam on top.

Slow Cooker Carnitas

I tried this for the first time tonight and it came out excellent!!! I prepared as directed, except I used a bone-in pork shoulder roast and one can of chicken broth. It was very tender and the meat just fell off the fork. I really liked the flavoring too. This might also be good to roast in the oven afterward to get a little crisp on the edges. I bought corn tortillas to eat with it, but I think I will just eat it plain!
