Cabbage on the Grill

Reviewed: Jul. 25, 2011
I loved this! I received a big head of cabbage from my CSA basket and had never eaten or prepared cabbage before. I love how simple the recipe was since I had everything on hand. A lot of other recipes for cabbage seemed like a lot of work (or stink) and smothered in mayo. I did what a few other reviews said- put a half a stick of butter in there, salt and pepper, and real minced garlic. mmmm. I even tried it on the stovetop in the same manner. So easy and sooo very good.

Best Black Beans

Reviewed: Mar. 30, 2011
This is definitely a keeper! My kids are vegetarians by their own accord so I try to find new ways to incorporate beans into our meals. This was an awsome change. I loved the taste and would make this over and over. I took the recommendation to saute the onions and then add the garlic. Add the seasonings (I just threw in dashes instead of measuring and added salt and pepper). I do not like the liquid in the can of beans and always drain and rinse them so to make up for lack of liquid I threw some chicken broth (which i had in the fridge) but water would do fine too. Waited until most of the wliquid had evaporated and the beans were warm and to the consistancy I like. It doesn't look so pretty, so everyone kind of gave me a look and said what is this- I will admit even I was nervous about how it would end up tasting. Once you put that first bite in your mouth though, you will be asking for more! Definitely make a double batch if you have a family of 4+ as it disappears quickly.

White Chili II

Reviewed: Mar. 3, 2011
I must say I did not like how some of the seasonings came together in this. I have never eaten white chili before (we really only make red beefy chili) and wanted to try new beans. I didn't care for the sage and really could taste the ginger. It felt out of place... I really had no idea what to expect with this chili but I found it to be just OK. I used a rotisserie chicken because I forgot to thaw out my chicken and I dont like nuking them. I don't feel like that was the right move with the chili... I would stick with the recipe and cubed your chicken. It made the chili extremely thick- so thick I ended up putting a lot more broth into it. Which in the end it did not need.

Best Ever Corn Muffins

Reviewed: Mar. 3, 2011
I don't know if my review will really "count" as there were drastic changes to the recipe. Firstly I lowered the amount of sugar like several other reviews to 5 tbsp and I was going to add a little bit of honey but I spaced and forgot. Also when I was putting together the bisquit and cornmeal, I found that I only had 3/4 cup of bisquit left- erg. So I upped the cornmeal to 1 cup. I prayed that it wouldnt turn out bad and they didnt! My kids loved them and I like how they were more like corn bread since we were eating it with chili. This recipe is awesome because even if you have to alter it (due to whats in the cupboard) everything should work out. Note: I used buttermilk instead of whole milk but I don't know that it really makes a difference

Garlic-Lemon Double Stuffed Chicken

Reviewed: Feb. 3, 2011
This recipe is good and I love the idea/concept behind it. I was more or so looking for a base recipe for some stuffed chicken. I hate when people change the recipe, so I did try it as per recipe except for pounding and rolling the chicken instead of bookstyle and it was okay. There was something missing with the filling. The breading was great. What would make the recipe awesome, would be to soften the creamcheese a little and add shredded cheddar, some garlic salt (needs salt!!). Mix the filling together and the add to the chicken. Most of my cheddar came out and left just the cream cheese- which seemed bland since there were no seasonings at all inside, all of it is for the breading! Great starter recipe, to add new things and try your own variations.

Gingerbread Boy Cookies

Reviewed: Dec. 13, 2010
These cookies were just OK to me. They were soft, very soft which is the ONLY way I like cookies. I feel like there is something missing in the taste... definitely not a traditional gingerbread cookie taste- more like a molasses cookie. I will try doubling the spices next time like some others suggested, otherwise on the next recipe! Oh also, make sure you roll it over very very thin otherwise they the arms tend to round out to the neck.

Cream Cheese Frosting II

Reviewed: Dec. 13, 2010
I don't typically review on here since I tend to forget too, but I almost had to make sure to leave one for this. Amazing frosting and super easy! I would consider myself an average cook and my baking is NOT my specialty. Go by the book on this recipe! I tried taking the advice of adding an extra cup of sugar, and I did not like it as much. I tried it before hand and thought mmmm absolutely delicious but then decided to see if it was possible to make even better with more sugar. I only added 1/4 maybe 1/2 extra cup of sugar but had preferred it beforehand. It didn't ruin the frosting by any means, I just personally LOVE real tasting cream cheese frosting and not the SUPER sweet frosting. Either way I am so proud I was able to make the best tasting frosting I've had in a loooooooong time.
