My favorite things to cook
I love to cook for my family modified healthier versions of their favorite dishes. I love trying my hand at ethnic foods and getting my husband to eat veggies that are too small for him to taste!
My cooking triumphs
Vegetarian enchiladas, of lately. I make some pretty good salmon patties with spinach inside of them (can't taste it, ask my hubby!).

Vegetarian Moussaka
Great recipe! Instead of frying the veg in a skillet, you can bake in the oven at 375 for about 30 min. Also used 2 eggplants, sliced lengthwise b/c you can never have enough eggplant! I used 2 cans chickpeas instead of lentils - I prefer the taste, color, and texture. Used large can (28 oz) of crushed tomatoes instead of whole and added some fresh basil to sauce mixture - adds the most amazing flavor! This is a great freezer recipe too!

Fudge Chunk Brownies
These are, as my hubby put it, "the best brownies I've ever eaten!" So good, chewy and fudgy, and SUPER easy. I used semi-sweet chocolate chips (Ghiradelli) instead of choc squares bc that's what I had on hand, so about 1/3 cup melted with the butter and about 2/3 cup mixed in with batter. Baking time was exactly 25min for my oven. Soooo good, thanks Belinda!

Potato and Bean Enchiladas
I LOVED this vegetarian low fat recipe! I made a lot of modifications to suit my taste: used sweet potatoes instead of white, added garlic powder and oregano to spices and 1/4 cup tomato sauce instead of ketchup. Mashed the potatoes and added a bit of ricotta and tomato sauce to moisten. Folded in the beans. Softened the tortillas in warm tomato sauce instead of oil (this works identically and cuts fat). Also added fresh garlic, white wine, and green chiles to tomatillo salsa. Mont jack cheese instead of fresca. I know I seemed to have changed it a lot, but was soooo yummy - GREAT basic recipe. THANK YOU!
