Slow Cooker Latin Chicken

This was very tasty and easy to make. I had medium salsa so I opted to add some jalepenos for that extra kick. Used 2 cups salsa, only had half the amount of cumin, and upped the chicken broth so it was a bit soupy; still had a great taste though. I spooned this on top of brown rice and served. My daughter, who's not a fan of beans, cleaned her plate; beans and all.

Spinach and Feta Turkey Burgers

I added a little Worcheshire (sp?) sauce and Spike seasoning. Otherwise I stuck with the recipe. Since it's not grilling season, I cooked mine in the oven. It turned out great. I enjoyed it with the Tzatziki Sauce I and lettuce, while my children put lettuce, onions and other traditional condiments on theirs. Another hit at our house. Can't wait to try them on the grill.

Kielbasa Alfredo

I used whole wheat rotini, and turkey kielbasa, and olive oil. After cooking the kielbasa, I removed it from the pan then added and sauteed garlic, parsley and a little bit of chopped spinach. I added the alfredo sauce to the pasta, with a bit more spinach. Added the meat, and sauteed garlic and spinach, let it simmer long enough to heat the additional spinach and then enjoyed wonderfully satisfying and tasty meal. Thanks so much.

Buffalo Chicken Dip

Excellent! Made it for today's party and used the used Rotisserie chicken and Blue Cheese instead of Ranch. I was going to add the blue cheese crumbles, as another reader did, but I don't think it needs it. As a matter of fact, I may have to make another batch, because the kids and I can't stop dipping; it's so tasty. Definitely a keeper.

Smooth Sweet Tea

I decided to make some iced tea today but noticed something was missing after tasting it. I looked up the recipe here and decided to try it (before reading the comments). I admit I was wondering about the baking soda ingredient but I added it to my mixture anyway. Well, baking soda IS the missing ingredient! I have perfect sweet tea now.

Seafood Stew

Very good. Based off others comments, I too used a different fish (cod) and since I'm not fond of shrimp, substituted scallops and crab meat. I did not use the orange juice concentrate, but substituted 1/2 cup white wine and 1/3 cup lime juice. (I was a little timid on how it would taste with lime juice.) I also cut down on the tomatoes as they were too many for my tastes. However, I made one mistake in adding the scallops too soon. Next time I will add the fish and crab meat first and let them cook, then add the scallops at the last minute since they cook so fast. I paired the stew with sliced Italian baquette, and a mixed salad. Wonderful meal. So much so, my friend ate 3 bowls of the stew. I will definitely make this again, and maybe try it with the orange juice concentrate.
