Easy Creamy Chicken Casserole

Excellent base recipe! I really felt that this recipe begged for a little creativity...I sauteed onion,garlic,and variety bell peppers with the chicken in a little olive oil. Seasoned with a litle poultry seasoning/salt/pepper. I added maybe 1/4c-1/2c of homemade broth and set the skillet to low to steam the chicken until done. When done, I shredded the chicken. I used maybe 8-12oz sour cream,1 can of cream of chicken soup and I whisked that together with the liquid from the pan. I combined the chicken, sauce mixture, and a handful of frozen veges (peas,carots and brocolli). Topped with shredded cheese,crackers (w/o butter),parmesean cheese ( the kind in the shaker can)..and a little spritz of olive oil. .......

Bran Flax Muffins

I used 1c zucchini and 1c carrots...didn't have any oat bran..i used oatmeal that I put thru the grinder with the flaxseed...I also added 1/2 cranberry...these were not done at 15 min...baked for 10min more with a drizzle of agave syrup on top to enhance flavor...much better!

Turkey Veggie Meatloaf Cups

these were tasty, but they were mushy and barely held together...next time I might add only 1 cup of zucchini....maybe add 1/2 lb of lean ground beef...the kids liked the BBQ, but hubby wanted a sauce that was a little more tomato-y...might play around with this one..as is it's just okay..

Lemon Blueberry Bread

I used frozen blueberries....bottled lemon juice..and powdered sugar for the glaze...My husband had a piece and experienced a "foodgasm". nuff said :)

E-Z Chicken Tortilla Bake

this was okay. the tomato soup flavor was really powerful..needed some more "zing"..maybe some spicier salsa or fresh jalepeno...i tried both cooked and un cooked torilla strips..both turned out soggy..like noodles...maybe serve this over a bed of crispy torilla strips?..not much to this..okay in a pinch..not one of our favs..

made several revisions: subbed 1/2 c applesauce for oil, reduced sugar to 3/4c ea and cooked for 15 min. Turned out really great! very yummy!

To Die For Blueberry Muffins

well, im not sure what all the fuss is about, but i found these to be nothing special. Yes, they rose, but the muffin is so dense, and the butter in the topping melted, cementing them in the muffin tin. ( and yes, I used a non stick tin, and misted with cookng spray). The muffin is sweet and would have been good had it not been so dense and fell apart. I made these for a muffin basket, and now i will have to find something else to make because all i have from this batch are crumbs.

very good! lots of subtle flavor notes that compliment the cheese..it was not "saucy" enough for my tastes..so I will either double the sauce or reduce the noodles next time..very yummy!!!

Chocolate Chip Banana Muffins

the kids love these!! I use a container (1/2 c) of vanilla yogurt..no need for van extract...with or without nuts..use slightly less sugar as I feel it is not needed...esp with the sweetened yogurt..winner!

Alison's Slow Cooker Vegetable Beef Soup

This really was very good, and after reading reviews, here is what I did : I used big chunks of carrot and potato, so they wouldn't get mushy...used a whole bag of frozen grn beans instead of mixed veges...only used 5 bullion cubes and omitted the salt..used a little more than 2 cups water...i was out of crushed tomatoes, so I ran two cans of stewed tomatoes thru the blender..also browned the meat in olive oil with a little garlic powder....the only reason I didn't give more stars was that I feel 2tsp of pepper is WAY too much! I used 1 1/2 and it was still to peppery! Almost ruined the dish! Good basic recipe and obviously lends to a lot of creativity according to taste

yes, left as is, it is bland, but I do agree with other reviewers, this is a wonderful base to add your own seasonings to...I used different cheeses to create a cheese sauce with a little bite for my kids veggies...I am keeping this recipe to use again later and experiment with

Apple Strudel Muffins

These were yummy! I did add some cinnamon to the batter and decreased the sugar to a total of 2/3 (1/3 cane sugar and 1/3 brown). I did find that the topping ran off the muffins while baking..maybe need more flour, less butter??...will experiment with other reviewers suggestions on this one...overall a tasty treat that everyone enjoyed! =)

Slow Cooker Pinto Bean Bonanza

While i'm sure this recipe is inviting for each individuals additions according to taste..I made it per the recipe. I found it to be mildy spicy and mildy flavorful. It is not something I would make again. Not a bad dish, just not 5 stars for me.

Cherry Chocolate Cake

made this as written, except used sugar free canned frosting for ease and no sugar added cherry filling. Topped each peice with a little frosting, whipped cream, cherries and slivered almonds. Was very rich and moist, without being too sweet. Hubby like this for his b day!

Cheese Sauce

my son and I tried this...we had a craving for mac n cheese =). I had to use evap milk+ H2O, because I was out of milk. I didn't measure the cheese, but I did use a variety mix (sharp ched, parm, colby, "mexican blend")..the texture wasnt velvety smooth..but it worked. we adjusted the flavor by adding seasonings and different cheeses. this is a good basic recipe to experiment with..worked for us.

Old Fashioned Oatmeal Cookies III

Holy Heck these are good! I split the 2/3c butter between crisco and real butter..used vanilla instead of almond extract..added dried cranberries soaked in burgunday wine and finely chopped almonds....and WOW....yum! I found that if you cook them closer to the heat, they spread out and make a cripsier cookie....put the dough in the fridge first, and cook towards the top of the oven for a thicker cookie that holds its shape well. Both are fabulous!

Crispy Mashed Potato Pancake

Not sure why..but this completely flopped when I made it. I figured out that u need a very hot skillet to get the pancake to develop a crust...most of mine just crumbled into a big mess...it was like trying to sculpt with pudding..not a success at all..would welcome tips on how to help this recipe turn out right...

White Cheese Chicken Lasagna

Good recipe! Mine made enough to overflow the pan...def don't be shy with the cheese on this one..more the better...I didn't use enought salt, because we don't use a lot of salt, but between the ricotta and the spinach, it is def needed in this dish. use plenty of garlic and onion, otherwise this will be bland. I will def make again and add my own tweaks. I am thinking this would be good over egg noodles instead of lasagne....
