Roasted Cauliflower Soup
this was good! I wound up using 2 heads of cauliflower...I think the amount varies on the size of your cauliflower and how much you like the taste of it :) ..I found that 450 was way too hot in my oven...400 worked better...I roasted several cloves of garlic to add in as well. I took the garlic and half the cauliflower, pureed them, and added them back into the soup. I wound up adding a little more chicken broth.. worked out very well and was flavorful! I did substitute coconut oil for butter and almond milk due to dietary restrictions. I think this recipe could be varied in a lot of delicious ways!

Gluten Free Banana Bread
I used 1 1/4c bobs red mill gluten free flour mix, 3/4c almond/hazelnut flour, I added 1 tsp baking soda, 1 tsp vanilla, 1tsp cinn, and a dash or two of nutmeg. This made 6 generously sized "mega muffins". I did not use maple syrup, as my bananas were VERY ripe and very sweet. I resisted the temptation to add nuts or choc chips, but I may next time. these rose very well, I cooked for just under 30 min. The tops are a little crusty around the edges, the inside is moist and dense just like banana bread should be. I think next time I will try a different ratio of spices, as it just needs a little "zing", but overall, I am very pleased with the result!

Black Bean Brownies
could not believe how good these husband was in disbelief that there were beans in this recipe...mine came out very moist..done, but a tad mushy.. I will try again using other reveiwers suggestions....its a keeper!
