Sausage, Potato, Carrot Bake
Easy, quick to prepare, and a huge hit with my hubby! I'm planning to serve this the next time we have guests over....I didn't change a thing. The onions caramelized beautifully, and the sausage crisped up nicely. Thanks for a great recipe!

I received a nearly identical recipe from my Mom's neighbor, who brought these over as a Christmas gift. My Mom despises seafood, and she had no idea there was crab in the recipe, eating several wedges and raving about them. She wouldn't eat any more after we told her...which was just fine with me and my hubby! Spread the topping on, freeze the muffins for about 30 minutes on a baking sheet, then cut into triangles...they don't last in our house. Thank you for posting this, Tracy!

Rockin' Salsa
I've been making this for a couple of years now, and I love it! I do tweak the ingredients and quantities a bit based on what I have available. I grow jalapenos and portugal peppers here in NH every year, so I use those, as well as sweet peppers. I use red or white onions, and I add extra seasonings. I've found that apple cider vinegar and lemon juice work just as well as white vinegar. I also agree with other reviewers who reduced the amount of sugar. This is an amazing recipe, and one I will continue to make for years to come!
