Chef John's Banana Bread

Tasty with a good texure. Not as moist as I had hoped and could use more banana flavor but pretty good. Followed the recipe exactly and batter was too much for both a foil bread pan and a glass one. Overflowed in the oven. Also had to ad 10 mins to cooking time.

Boilermaker Tailgate Chili

So great! Made it exactly how the recipe states except couldn't find "spicy chili beans" so used kidney beans with jalapenos. Good solid taste with just enough warmth (spice) to make it intersting but not painful for this Yankee.

Rempel Family Meatloaf

Not bad. Onion soup was a little overpowering but hubby commented that "it didn't have the Alpo taste" that meatloaf made with tomato paste has.

Downeast Maine Pumpkin Bread

Very easy! Made 2 puff-over-the-top loaves without spilling. Cooked in 10 mins more than orig recipe. Very moist, not over dry when baking complete. Used exact recipe and perfect the first time. Keeper!

Lemon Cake

Made this cake as a double layer in 10 inch round pans. Didn't have any problem with the cake rising. I'm sure if I hadn't beat the cake for the full 4 minutes, it would have been smaller. Husband remarked that it was sort of chewy like a sponge, definitely not light and fluffy. Also placed greased parchment paper in the bottom of the pan to prevent sticking as mentioned in another review. Used Lemon Cream Cheese Frosting by Carol for filling and icing. Also used yelow cake mix as per the recipe, not lemon. Was nice lemon flavor without being overpowering. Pretty good.

Gorgonzola Stuffed Chicken Breasts Wrapped in Bacon

Very tasty! Tender, moist and the bacon gave the outside of the chicken some added flavor. I doubled the recipe and stuffed 3 large breasts and put the broiler on low to crisp up the bacon for the last 7 minutes. Great with oven potatoes and asparagus for sides.

Lemon Cream Cheese Frosting

Good icing. I used it as both the filling and the icing on a two layer cake. Like the lemon flavor as it was not overpowering. Needs to firm up in the refrigerator though to prevent the layers from sliding when icing the rest of the cake. Kids licked the bowl, spoon, and beater.

Asparagus Parmesan

Awesome Sausage, Apple and Cranberry Stuffing

Used it on Thanksgiving to stuff the turkey. Tasted great!! Omitted the cranberries for hubby but loved the taste of the apples. I used Rosemary leaves and probably would either use less or chop them up in the food processor because it overpowered the dressing slightly but will still make it every year now.

Easy Meatloaf

Pretty good. I used 80/20 beef because it was on sale. Had to remove some extra liquid fat after it was finished cooking. Was very tender, not dry as some other recipes. Like the sauce on top.

California Grilled Veggie Sandwich

Really tasty! Great the second day too. Added chicken the second time for more protein. Grilled the chicken first, then combined it with the veggies and poured over the mayo. Fabulous!
