Made this cake as a double layer in 10 inch round pans. Didn't have any problem with the cake rising. I'm sure if I hadn't beat the cake for the full 4 minutes, it would have been smaller. Husband remarked that it was sort of chewy like a sponge, definitely not light and fluffy. Also placed greased parchment paper in the bottom of the pan to prevent sticking as mentioned in another review. Used Lemon Cream Cheese Frosting by Carol for filling and icing. Also used yelow cake mix as per the recipe, not lemon. Was nice lemon flavor without being overpowering. Pretty good.
