My favorite things to cook
Baking things is my favorite. I actually don't like to cook and generally only do it out of necessity. I like variety, and like to cook Chinese, New Mexican, Italian, keeping thing international.
My favorite family cooking traditions
We have a decent, home-cooked dinner almost every day. Now and then when schedules get busy we just grab something, but as a family we made it a point to have something prepared that was good. Hubs and son help.
My cooking tragedies
Too many to note. I try to forget about them. Once, teenaged son said "Oh mom, you're not even trying anymore!"

Seminary Muffins
I have made them twice now, following the recipe as written except I only sprinkle on a few chocolate chips on top which ended up being only 1/4 cup. Just enough to satisfy the chocolate cravings. Would also be good with dried cranberries or blueberries. I had little too much batter for 12 and ended up with 2 extra in custard cups. Next time I will reduce the sugar and salt and try whole wheat to improve the nutritional content a little.

Southern Coleslaw
I wanted to make a healthy cole slaw with what was on hand, so I gave this a try. I had a bag of cole slaw mix and some fresh garden tomatoes. I didn't have lime juice, so I used lemon juice. I added about 2 TB of agave nectar since many reviewers said it was too tart. I let it sit in the fridge for about 30 minutes while I finished dinner. It was pretty good, and would make it again.

Peanut Butter Cupcakes
I made them exactly as the recipe directed. Initially, I didn't like them very much. The outside was hard and the peanut butter taste wasn't very noticeable. I thought the recipe was a dud. However, the next day, and now today, I have to say the texture and flavor have actually improved. I've got them stored in a plastic storage box tightly closed with chocolate frosting on them and now they are perfect. So I would say they improve after a day or 2 if tightly stored.
