Indian Spiced Rice

Very, very nice and hearty! This makes 4 really large servings. I used basmati rice, and omitted the butter at the end. I felt this could use a little more "heat", so next time I'll add some red chili powder as well. Thanks for posting this!

Vegetable Fried Rice

This was nice, though I felt it was lacking flavour. Maybe it needs more herbs and spices. The only change I made was in not adding the sesame oil in the end, because I didn't think the dish needed any more oil! This recipe would make 4 main dish servings.

Carrot Dill Soup

Outstanding! I used garlic powder, water (instead of chicken stock) and whole milk. I also had to use dried herbs but even so the flavour of this soup was fantastic, and it's texture... velvety! This tastes wonderful with warm garlic bread.

Curried Peas

Really lovely! I had to use vegetable oil because I didn't have ginger oil, and frozen peas. I also reduced the chili to 1/8 teaspoon (after scaling down to 1 serving). This was fantastic with chappatis!

Chickpea and Couscous Delight

Wonderfully easy and tasty! I peppered this nicely, and didn't add any extra salt. Next time I'll try lemon juice instead of vinegar for more flavour. Thanks for this one!

Depression Cake III

Wonderful taste, though it refused to get out of the pan! I cut this cake into brownie-like pieces and removed them individually from the pan... made for a messy job, but I didn't mind... all the more crumbs to pick at! :-) Next time I'll use less sugar and raisins, and probably omit the allspice, because I prefer a more intense coffee flavour, and I found this to be rather sweet! Nevertheless, great recipe, and I WILL be making this again! Thanks!

Spiced Apple Muffins

I really liked these muffins, though I made a few changes. I used whole-wheat flour and omitted the anise seeds and ginger, which I don't like. I halved the recipe and it made 6 small muffins that tasted really good! I'll make these again, but next time with baking soda to make them a little less dense.

Mexican Vegetable Rice

This was great! Very fresh tasting, and is best served hot. I used fresh veggies, omitted the garlic, and used water for the vegetable stock. I had this with yogurt for a lovely lunch.

Asparagus Cashew Rice Pilaf

Fantastic taste! I roasted the cashews though, since using them raw makes them hard to digest. I had this with broccoli for the asparagus. Note: While scaling down the recipe, take care for the amount of butter you use. You will need a lot less than the recipe calls for if you scale down the recipe.

Banana Oat Muffins

The best muffins I've had, period!!! They were fantastic fresh from the oven and are perfect for breakfast. I substituted applesauce for the oil, omitted the egg, used brown sugar, and it still turned out great!

Oatmeal Whole Wheat Quick Bread

This was great! The honey is nearly imperceptible, but I don't need my bread sweet, so this recipe fit the bill! Yeild is one really small loaf, so next time I'll double the recipe to make proper-sized bread slices. I baked for 40 minutes.

Granny's Corn Flour Tortillas

This tasted great, but I had to add a whole lot more water to hold it together, and it was still very brittle and dry when I rolled it out, and cracked a lot at the edges. It was more 'crisp' than tortilla-like, but I think with practice, I'll get this one right.

Cavatappi with Spinach, Garbanzo Beans, and Feta

Nice enough, but a little too garlicky for me. I substituted garbanzo beans with soybeans, and feta cheese with chedder, since that's all I had on hand, and maybe that's why I wasn't very thrilled with it. Nutritious and filling, otherwise.

Cornmeal Mush

Not bad, but extremely bland... I suppose that's how mush is supposed to be! I used it as cereal, with cold milk and no sugar, so maybe that's why I wasn't particularly thrilled with it. Very filling as breakfast though.

Basic Flaky Pie Crust

Very good recipe; the crust is as flaky as it promises to be. I doubled the recipe for a lattice top as well, but needed to add 1/3 cup more water to make the dough ball-able. I froze the dough for a little over an hour, and although it cracked a bit while rolling, it turned out very managable and sturdy. Thanks!

Apple Pie III

My first pie ever, and it turned out almost perfect! I probably baked it a tad too long though, and the filling became a bit mushy, but it was a great tasting pie nevertheless! I sprinked extra cinnamon while filling the crust with the apple mixture, and I didn't need to refrigerate the filling overnight either. The sugar was just right for me, and I don't think I'll be looking for any other apple pie recipe ever!

I love the flavour of cornmeal, it makes all the difference. The pancakes were bit on the buttery side, but taste perfectly wonderful! I had to add quite a bit more water to make the batter manageable though. It was a bit of a problem getting them onto the griddle without making a mess!
