Potato and Bacon Salad
This is a great basic potato salad. I loved that the texture of the eggs varied- it's a good idea to smash some and cut others ( i left out the yok of the ones I cut) and it gave the salad a good visual quality. I made the salad a bit sweeter but using a dijon mustard made with honey. Using red potatoes instead of russet added more flavor. The bacon was definitely the highlight- I made sure not to crumble in the fatty parts.

Tom Ka Gai (Coconut Chicken Soup)
This was an excellent and quick dish, save a few minor changes... (1) definately use chicken broth instead of water (2) forget about the fish sauce and tumeric. I also added a few think slices of ginger as well as the minced pieces giving more texture, doubled the lime juice and include the pulp, if you can this will nicely balanced the flavor of the coconut

Avocado and Bacon Soup
Instead of blending all of the onion and celery, blend only half of it. This created a hearty contrast and more interesting texture to the soup. We also garnished with chopped cilantro. Skip the white wine and add more heavy cream ;)
