Creme Brulee French Toast

growing up in an asian household ingrained in me the disdain of wasting food. Now that my household numbers just 2 (hubby and me) we frequently end up wasting at least half of french baguettes we purchase at the store. This recipe is a great way to use up the rest of that loaf. I decreased the serving size to 2, kept the crust on and cut into 1" pieces, used mocha mix (nondairy) instead of half and half and rum for the flavoring (our alcohol of choice). Let it all sit for exactly 24 hours and baked for 20 min. Turned out great! We will be making this in the future.

Zesty Slow Cooker Chicken Barbecue

We very much enjoyed this recipe! If you do decide to cook on high, it is imperative to shred chicken (once cooked) and cook on low in sauce for ~ 1 hour or so before serving, that will prevent it from being too stringy and enhances tenderness. After cooking we wrap a palm size amount of meat in bun dough (from any of your fave dinner roll recipes) and bake, resulting in a delicious and mess free sandwich (along the lines of the Chinese char siu bao). Perfect for on the boat...or other on the go!

Flourless Chocolate Cake I

I didn't want to bother with the overnight set and I don't mind cracked tops so I baked this without a water bath at 375 for ~ 30-45 minutes until a toothpick came out clean. It was perfectly moist and I garnished with strawberries!

Roasted Pork Loin

Sooo good! got completely eaten up at our dinner party and folks RAVED! Although I did not glaze the pan with wine, I just poured the concentrate juices over the meat after slicing.

Zucchini Egg Bake

very tasty! although i did alter it quite a bit. cut down to 3 servings and placed in a small casserole dish for me and hubs. Skipped the montery jack cheese step. Added one more eggs and some cream.

Vegetable Pot Pie

I did alter this a bit based on what I had in my fridge. Used turnips instead of parsnips, skipped potatoes and mushrooms but subbed with yellow squash and used beef broth. Overall it was easy and filling, but still a bit bland. I will make this again but next time season a bit more and add more herbs...i think a bit of rosemary and even some fennel seed would have given it a bit more pizzaz.

Fiery Fish Tacos with Crunchy Corn Salsa

I southern california'd this recipe a bit (since we live in SD) but really enjoyed it! Did the fish (snapper) as the recipe called for, but broiled it instead of grilling...if you do this don't forget that you may smoke the house up a bit since the smoking point of evoo is lower than the broiling temp. Instead of red bell peppers (not a fan personally) and jicama I instead made a pico de gallo with roma tomatoes and 1 serano to the onion and cilantro. Added fresh avos (of course). It was a hit and will definitely enter our rotation!

Winter Fruit Salad with Lemon Poppyseed Dressing

This was a great and easy to make salad. I omitted the swiss and didn't miss it at all. I think next time I may just make it with with pears and leave out the apple.

Creamy Celery Casserole

I had to used up a bunch of celery from the CSA and this was a great way! Subbed out milk for soy milk, green chiles for pimento and no mushrooms. Also placed some cooked/sliced chicken breast at the bottom of the casserole dish. Overall a great dish but next time I will cut the butter way down and maybe even leave it out completely from the bread crumbs (sub with a little bit of evoo).

Beet Bundt Cake

This is a GREAT cake! Not too sweet like some cakes are and very very moist. I used fresh beets since i had an abundance and topped with cream cheese frosting instead of powdered sugar. I only wish it would have maintained that dark red color after baking.:)

Roasted Garlic Cauliflower

Very easy and yum when appropriately salted/peppered. I threw on some red chili pepper flakes (cause I just can't help myself) and ate it over some rice. Oh and there was chicken on the side as well. :)

Lemon Lavender Avocado Loaf

Had to use up a bunch of avos (4) and didn't want to make another batch of guac. The lavendar was very fragrant and really added to the bread, but did not overpower. I loved it, makes a fun bread too for St. Paddys!
