Gluten Free Banana Bread
I am giving this one four stars, these muffins turned out pretty good. My kids and hubby loved them, and I ate more than one so all in all pretty tasty. What I didn't like is that the recipe called for an all purpose baking flour and since all gluten free flours are different it wasn't easy to see how these would turn out. I used ww all purpose gf mix. They were a bit doughy inside even though I cooked them for over 30 min (in muffin tins). Hubby said they tasted creamy?? Idk but Give it a go there pretty good. I will try again with another flour mix!

Tofu Parmigiana
Made it today, it turned out really well nice idea! I did freeze it however later wished I didn't ... it became crumbly and harder to work with. I think I was suposed to drain it BEFORE freezing..oops any way next time I will press the tofu and drain it well!YUM!!

Sweet Potato Pie I
Turned out perfect! I did use more than a pound of sweet potato though. When I mesured it all out it wasn't enough to fill my pie pan at all ( I must have a large pie pan)! I just added more sweet potato and it turned out really well!
