Golden Sweet Apple Cornbread

I usually make cornbread from scratch, was hesitant to try since I like some white flour with whole wheat. But, this is a keeper!!!! My 17-month old gr-son loved it!!! Modification: only had regular chunky applesauce on hand, this was a perfect choice that left some apple chunks in the bread. I made these in muffin pans for only 15mins Nice and moist, not crumbly. Great with chili or with honey.

Spaghetti Squash I

This was a great way to serve spaghetti squash(SS), I'll always use this recipe from now on!!! My husband is a 'gourmet' cook and he's not a fan of SS (how I prepared it) so, I tried this recipe and he raved about it!!! He was prepared for my usual recipe of SS, so he still wanted his traditional pasta and sauce. (This was his side dish) Modifications: 1) I poked holes in the SS(before cutting it in half) and put it in the microwave for 5- 10mins to soften the skin . This makes cutting it in half easier; 2) then put it in the oven (350) for 15-18 mins; 3) added sun-dried tomatoes(since I had them in the frig) along with the fresh tomatoes in the skillet; 4) did not add black olives(hubby not a fan of olives) . Thank you for sharing a great version of SS.

Turkey Potato Casserole

I rated this high because of the delicious taste, so easy, and the only ingredients used that were not leftovers were the onions, soup, and cheese- I always have that on hand,too. I did improvised with what leftovers I had, and after tasting, I'll make another change. I followed the recipe except I substitued the green beans with creamed corn- omitted the cheese cubes - added a bit of milk to my mashed potatoes before spreading on the top. This made the m.potatoes spread better. I had leftover gravy, so I poured the heated gravy over the casserole servings on the plate. This gave a richer and moist taste. Now, what I would do different: the onions were too crunchy and strong, I would saute them before adding them to the casserole. But this is definitely a keeper, in fact, my husband raved about it. That's a huge compliment since he's an excellent cook himself. Thank Peggikaye!!!
