Dill Cucumber Dip

Reviewed: Sep. 6, 2010
Everyone LOVED this dip! Great way to use up extra cucumbers from the garden. We had this on crackers and veggies. I added a little bit more dill weed than the recipe called for and used HOT chili powder instead of hot sauce, and I thought it was perfect! * * I found that the easiest way to slice up and seed the cucumbers was to cut them in quarters lengthwise, so they're shaped like pickle spears. Then, run a knife along the top of each spear to trim away the seeds. * *

Buffalo Chicken Fingers

Reviewed: Dec. 12, 2009
SO simple and delicious! I made the same amount of breading, flour, and egg mixtures but had enough for 6 breast halves. Also, I like a bit more SPICE! So, once they were done cooking, I tossed these chicken fingers in a mixture on 1/3 cup melted margarine and 1/2 cup Frank's HOT sauce. Absolutely DELICIOUS! My favorite way to eat these it to wrap them with lettuce inside a whole wheat tortilla and dip in ranch/bleu cheese dressing-YUM! Thanks SO much for the great recipe! Definitely a keeper :)

Amy's Garlic Egg Chicken

Reviewed: Nov. 3, 2009
This recipe was simple, and it's hard to mess up chicken so I gave it 4 stars. There are a few reasons that it's not a 5: First, it took a bit more than just 1 egg yolk to make enough marinade. I used 3 egg yolks for 4 breast halves. Second, this recipe made WAY more breading than I actually needed. I think it would've been sufficient for 12 breast halves. I will consider making this dish again, since it was rather tasty. However, I'll definitely adjust the ingredients.

Fettuccini with Basil and Brie

Reviewed: Nov. 3, 2009
This pasta dish was wonderful! Delicious when served hot or cold as left-overs! I think I may also try to substitue feta for the parmesan next time, just for something different. What a great dish!

Cheese and Broccoli Chicken Soup

Reviewed: Oct. 26, 2009
This soup was DELICIOUS! I did make a few changes, as other reviewers recommended: I used 2 bags of frozen broccoli cuts for convenience, and used 8 ounces of Velveeta cheese in addition to about 1 cup of shredded mild cheddar cheese (We're BIG cheese fans). Also, I added 4 sauteed garlic cloves and 1 large sauteed yellow onion for added flavor. This is a LOT of soup for two people, but it's SO GOOD that we're both happy eating it all week! Especially delicious with warm sourdough rolls. This is my idea of a perfect soup recipe :)

Taco Dip II

Reviewed: Oct. 23, 2009
Overall, this turned out great! I also added 1 taco seasoning packet to the ground beef mixture, and I used about 2 1/2 cups of cheese total. I used a mix of shredded "taco cheese" (a blend of cheddar, Monterey Jack, Colby cheeses and spices) and shredded cheddar cheese. I used about 2 cups of cheese before baking and then added the rest about 5 minutes before removing the dish from the oven. This dish took me about an hour to prepare the first time and about 10 minutes to cool, so I would budget time accordingly. Thanks so much for thus great recipe!
