Sweet, Sticky and Spicy Chicken

A few changes: Coated the chicken in flour Cut soy sauce amount in half and replaced it with oyster sauce Added 1 extra tsp of hot sauce (Sriracha) Cut out the ginger root and added more garlic (not a big fan of ginger)

Chicken Pot Pie IX

Turned out great with a few adjustments. I added a few other vegetables; including corn and potatoes. I didn't measure any of the vegetables and just eyed it to my liking. I cooked the potatoes and chicken together first, added the water, along with some chicken bouillon (about 1 tsp) and then added the remaining vegetables later because it takes less time for them to cook. For the liquid mixture, I added a little more salt than the recipe calls for and also added an extra 1/4 cup of broth and 1/3 cup of milk. The chicken mixture could be added into the liquid mixture once it thickens and poured into the pie crust all together. I also made my own pie dough, which was super easy. Just mix together 1 1/2 cups of flour, 1/2 cup of butter, and 1 tsp of salt with a fork. Make sure the butter is cold. Then once the dough is crumbly, slowly add in about 1/2 cup of ice cold water (you may use a little less) until the dough stays together, but isn't too wet. I refrigerated my dough for 2 hours before rolling it out. Yum!

Mexican Corn on the Cob (Elote)

A few adjustments: I replaced the cojita cheese with grated parmesan, which is easier to find. I also thinned out the mayonnaise by adding the lime juice to it and seasoned it with salt and pepper. I made it a little healthier by cutting out the butter and sprinkling some cayenne pepper on the top of the cheese. Voila!

Chicken Enchiladas I

These were actually pretty good! I did make a few changes to this recipe including boiling the chicken instead of cooking it in a skillet. I added 2 cans of chicken broth plus another can of water to a pot and boiled the chicken for 5 or so minutes. Then I covered it, let it sit and simmer for about 10 additional minutes. I shredded the chicken instead of dicing them and used that water/both mixture to replace the 1/2 cup of water. I'm also a cheese lover, so I doubled the amount of cheddar cheese. And instead of adding chili powder, I just bought a jar of HOT taco sauce. It was perfect.

Homemade Chicken Fettuccine

Good recipe! I also added 2 cups of heavy cream, some cornstarch to thicken up the sauce and fresh garlic instead of the garlic salt.

Tiramisu II

I've always been a fan of tiramisu and was a little nervous when I first decided to try to make one of my own. This is an excellent recipe and like many of the other reviews suggested, it would be wise to make more coffee/rum than what is stated in the recipe. I tripled the amount and it turned out perfect for me. :)
