No Bake Cookies V

This is a good recipe but to make it "healthified" I used maybe half of the sugar it called for. I also added an extra cup of oats. I even substituted some the sugar with stevia. My kids didn't notice (they love these!!) and it makes a great after school snack.

Chicken Stew with Dumplings

I have made this stew 3 times now and it's the perfect go-to for chicken stew. You can always add more flour if you want it thicker. Great for crowds! I added some white wine this time--it was a great addition!

Cherry Cheese Pie

This was very good. I am giving 5 stars not just for flavor but also for simplicity. I followed the recipe precisely and didn't have any problems. The only thing I did differently was put it in a 9x9 baking dish and thought it was a better system since it seemed more like a "dessert" rather than a pie, and since it is so rich it is easier to cut/serve smaller pieces.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

I thought the cooking method was going to leave the ribs a little bland since they weren't marinaded or cooked long with the sauce but boy was I wrong...these were delicious! A few things I did differently...baked for about 4 hours at 225 since we had to leave the house for a few hours. I didn't cook the sauce very long since it seemed plenty thick off the bat and I didn't have time--about 15 min. or so. Also I used spare ribs instead just b/c of cost but they were plenty tender. Great Father's Day meal!

Cha Cha's White Chicken Chili

very good flavor...**shredded chicken** and used 1 7 oz. can CGchiles and 1 fresh jalapeno seeded and diced, which makes it less spicy altogether...drained beans before adding...really yummy...didn't even have to use cheese, as others also suggested but used sour cream instead

Blueberry Breakfast Sauce

I used 2 cups of frozen Berry Medley from Sam's Club. One Tb. of corn starch was perfect--I read that some people added more but it was plenty thick. I also added about a 1/2 t. vanilla, 1 t. cinnamon, and 2 t. butter.

Key Lime Pie VII

I only gave 4 stars b/c I thought this was too tart but I have not tried a lot of key lime pies. Other than that, the recipe was perfect--very easy and perfect texture. Paired with some cool whip/whip cream it totally softened the taste. Someone suggested my key limes may have been not ripe enough (too bitter). The flavors seemed to settle more the day after so it wasn't quite so tart. I may try the lemon/lime combo next time that others used and will definitely use the bottled juice since many reviews said they didn't notice a difference. I interpereted 3 cups of SCM to equal 24oz.--isn't that correct? I barely baked it and it was firm (maybe 5-8 minutes)it must be some type of chemical reaction btw all of the ingredients that firms it..served frozen. Very Good.

Beef Stew V

Really delicious, a keeper! Good recipe for the leftover red wine that had been sitting in our fridge for a few months (I had reserved it for cooking). Next time I would prefer to use an all-natural broth instead of the boullion. I did not have fresh parsley, pearl onions or enough potatoes and it still turned out great! For a change add a touch of cream.

yummy but would definitely add more lemon flavor to the cake...also would want to double or triple the icing recipe..this recipe provides for a thin layer of icing on each cupcake..

excellent! the only thing I would do differently next time is cook it a little longer. I did cut down the sugars as others have recommended, just for nutritional reasons. I also didn't put the fruit in it b/c I prefer granola without fruit. You can always add it later anyway.

Slow Cooker Spicy Black-Eyed Peas

yummy! I didn't have time to slow cook it so I added 2 extra cups of water and cooked it dry beans and all, covered, on the stove, simmering for a little over an hour. No jalapenos or bacon so I just increased the cayenne and added a few frozen chopped bell pepper, a few tbs. vegetable oil, and extra ham. I also added an extra boullion cube.

Creamy Corn Soup

I really like this--I agree very easy and lower in fat!! I stuck the veggies in the food processer and had the soup ready start to finish in about 15 min. Next time I will probably substitute one diced potato for one of the cans of corn...a little too much corn for my taste...In my opinion, though, this would be a great base for any creamed vegetable soup.

Asian Chicken Noodle Salad

Delicious even without the water chestnuts and snow peas, which I completely forgot to put in! Lots of compliments. I did use cabbage instead and actually used 2X the amount. I think you need to let the dressing sit a little longer with the cabbage though to marinate it just a bit, maybe 10 min or so. I also halfed the oil and didn't use butter, as suggested by others. I also sauteed the cubed chicken in a marinade of veg. oil, soy sauce, fresh garlic, fresh ginger, honey and chayenne (I was out of crushed red pepper). It was a little more work but very tasty after added to the salad! Esp. the ginger, I thought, added some zing.

Mexican Chicken Corn Chowder

Great flavor. I did shred chicken and use broth/salt instead of boullion. I also added a few TBS. of flour as a thickener to make it more like a chowder and less like a cream soup. We also like cilantro a lot so I would recommend using it liberally as a garnish or just having a bowl of it at the table for people to add to taste.

Turtle Pie

Exactly the flavor I was looking for. I added whipped cream and it was the perfect touch not only for taste but also for presentation. I really like the idea of a "turtle cream" pie, and next time I will probably half ALL of the ingredients (except for pecans/shell) and put at least 8 oz. of whip cream (enough to fill out the pie crust) on top. I also decorated with pecans dipped in caramel, chopped chocolate chips with shavings, etc, and drizzled caramel. I would not use a graham cracker crust or cookie crust as someone recommended as it is already really rich (sweet).
