Chocolate Chip Banana Muffins

These came out amazing! Very fluffy, but moist as well. Substituted butter for veg oil, greek yogurt for plain and wouldn't change anything else!

Grandma's Carrot Cake

this cake is BOMB! I made only a couple of changes due to what I had on hand. I didn't use any oil, because I never bake with oil. I used 1/2 cup of butter and 1/2 cup of unsweetened applesauce to replace the cup of oil. I also only had an 8oz can of crushed pineapple. Las change was adding 1/4 tsp of ginger and 1/4 tsp of nutmeg because we like spice cake flavor :) The cake was super moist and very tasty! Thank you!

Chocolate Chip Cookie Bars

followed the recipe as written, but cooked them at 325 for 28 minutes instead of at 350. These are yummy yummy yummy, if you let them rest and cool on the rack before cutting into bars. They were gone the same night! added butterscotch and peanut butter chips with the chocolate and pecans! LOVE!!

Split Pea and Ham Soup I

Awesome for a base recipe. I simmered 2lbs of dry peas for about 30 minutes, then added some chicken bouillon to the water I used for the peas. I sauteed a whole yellow onion with 2 cloves crushed garlic; once the onions were cooked clear I added a ham bone that I had frozen. I added the bone to the "water" about a lb of the peas, onions and an herb satchel(rosemary, thyme, garlic and bayleaves) and cooked on the stove until the peas lost their shape. Then I added about 2 cups each of celery, carrots and potatoes along with the rest of the peas to continue cooking. I cooked the soup for about 4 hours altogether. I served it with crispy, cheesy (Parmesan and pizza cheese blend) croûtons made from a fresh baguette. Definitely delicious. I went easy on the salt, adding it as it cooked because the ham bone was pretty salty.
